Main Duties and Responsibilities

You will play a crucial role in supporting our Sous Chef in overseeing the kitchen operations for our Specialty Restaurant outlet. As part of your role, you will be responsible for ensuring the preparation and presentation of our dishes, delivering the highest standard of food quality which is expected of our brand. Key Responsibilities

JOB DESCRIPTION – JUNIOR SOUS CHEF

Job Functions & Summary:

Responsible for managing the day to day culinary operations in the assigned F&B outlet.

Job Roles & Responsibilities:

· Responsible for all food productions for the assigned outlet.

· Assist and work with the Executive Chef to develop menus, special promotions, food purchase specifications and recipes.

· Supervise culinary staff, ensure adequate staffing and implement training to increase staff knowledge about safety, sanitation and accident prevention principles.

· Develop and monitor food and labor budget for the section.

· Schedule and coordinate the work of kitchen employees to assure that food preparation is economical and technically correct and within budgeted labor cost goals.

· Approve the requisition of products and other necessary food supplies.

· Ensure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all times.

· Implement control to minimize food waste.

Job Description

You will be working in a commercial kitchen performing the below functions:

• Supervise meals produced, according to menu specifications, production schedules and menu cycle;
• Be able to plan, make decisions, and produce meals according to client requests, especially when the Sous Chef is not around;
• Carry our ordering according to load requirements, follow proper stock control and rotation (adhere to FIFO);
• Ensure production staff adhere to HACCP, Medina food safety requirements, and all hygiene procedures;
• Assist in planning rosters and deployment of staff as and when requested;
• Monitor the performance of machines/equipment and report any malfunction;

Requirements

• Must be able to use PCs and computer systems related to area of work (e.g. Infolog), read computerised worksheets, check and respond to emails when on duty
• Possess good knowledge of food hygiene and food handling procedures

• Willing to be cross deployed across sections in Food Solutions when required
