About the role:

Sous Chef, Chinese Banquet

The Chinese Banquet Sous Chef leads the culinary operations for Chinese banquets and catering events, ensuring authentic, high-quality dishes and adherence to strict food safety and hygiene standards. Collaborating with the Banquet Chef, Executive Chinese Chef, and Sales and Marketing team, this role oversees menu planning and event execution. The Sous Chef manages kitchen teams during events, monitors inventory, resolves culinary issues, and conducts quality checks. They also train junior staff and foster a collaborative kitchen environment.

Address guest and internal inquiries and complaints with courtesy and efficiency, ensuring all issues are resolved to satisfaction

Warm and Genuine Hospitality: Engage with guests personally, creating memorable and unique dining experiences at each banquet.

Hygiene and Safety: Uphold rigorous standards of food and personal hygiene, ensuring compliance with all health and safety regulations.

Budget Management: Collaborate with the Executive Chef to manage food and labor costs, ensuring financial targets are met without compromising quality. Assist in planning and managing capital expenditure requests, and follow up on purchase orders to ensure smooth operations.

Banquet Setup & Support: Organize banquet set-up, attend briefings and trainings, and support the culinary team from other properties and collaborations.

What you bring:

• Strong leadership and team management skills, with the ability to lead, motivate, and inspire team members. Commitment to staff training and development, fostering a positive and productive work environment
• Minimum of 1 year of current experience as a Sous Chef, Chinese Banquet or 3 to 5 years as a Junior Sous Chef, Chinese Banquet in a 5-star luxury hotel or luxury restaurant chain.
• At least 3 years of experience working in Southeast Asia, particularly in Singapore.
• Excellent knowledge of Chinese culinary techniques, ingredients, and flavour profiles. Knowledge of local palate is essential. Proficiency in Wok Station operations will be an advantage.
• Creative and innovative approach to menu development, with a passion for the profession.
• Deep understanding and knowledge of Food and Health Safety regulations and policies.

Schedule & Hours:

This position requires a person with a flexible schedule and the ability to work on a rotating shift basis, including weekends, and holidays.

• Preparation

- Oversee central kitchen bakery team

- Producation planning and employee scheduling.

- Advance preparation, weighing is done accurately, check extensibility and following the daily mixing schedule

• Dividing - Understanding the characteristics of each dough and able to perform troubleshooting

• Shaping - Understanding the amount of portion filling, roll up without damaging the dough, shape properly and according to the procedure

• Baking - Understanding and following the baking procedure and process

• Filing - Can weight correctly and understand the expiration date of each filling

• Sanitation – Understand and follow the correct cleaning procedures

• Other duties – Any ad-hoc duties as required by the manager such as housekeeping

Requirements:

• Minimum 5 years experience of bakery culinary

• Rotating shift (44 hrs 6 days - Day and night shift )

• Lead, mentor, and manage culinary team.
• Develop and plan menus and daily specials.
• Create prep lists for the kitchen crew.
• Manage food costing and inventory.
• Maintain standards for food storage, rotation, quality, and appearance.
• Ensure compliance with applicable health codes and regulations.
• Establish maintenance and cleaning schedules for equipment, storage, and work areas.
• Familiar with Chinese Cuisine, Sichuan Dishes, Dongbei Cuisine
• Familiar with Chinese Spices
• Work with front house staff to facilitate smoother working process

We are seeking a dedicated Chef de Partie to join our team in the manufacture of cooked-food preparations, particularly focusing on frozen dinners. This role involves preparing high-quality meals, managing production schedules, and ensuring that all food safety standards are strictly followed. The ideal candidate will have experience in large-scale food production, a passion for quality, and the ability to work under pressure in a fast-paced environment.

Job Description:
- Oversee the preparation, cooking, and packaging of frozen dinner products, ensuring consistency in taste, texture, and presentation according to company standards.
- Assist in managing the day-to-day production process, including coordinating with kitchen staff and ensuring that all food items are prepared on time and to the highest standards.
- Ensure that all prepared meals meet quality requirements, conducting regular checks on portion sizes, taste, and freshness before freezing and packaging.
- Follow strict hygiene standards and food safety protocols (e.g., HACCP) to maintain a safe and sanitary kitchen and production environment.
- Monitor and maintain inventory levels of raw ingredients, ensuring that stock is properly stored and rotated to reduce waste.
- Ensure recipes and preparation methods are consistently followed, making adjustments where necessary to improve efficiency and product quality.
- Train and supervise junior kitchen staff in food preparation, safety practices, and efficient use of kitchen equipment to maintain high production standards.
- Safely operate and maintain industrial kitchen equipment, such as large ovens, mixers, and freezing units, ensuring regular cleaning and upkeep.
- Assist with the preparation of production reports, documenting quantities produced, wastage, and any issues encountered in the production line.
- Work closely with the management team to suggest improvements in the production process, recipes, or equipment to enhance product quality or efficiency.
- Able to carry heavy goods, roughly 20KG - 40KG.
- Need working on Saturday, Sunday, public holiday and overtime.
- Able to work rotate shift and overtime.
