You will report directly to the Sous Chef and are required to work closely with the Sous Chef and Chef de Cuisine in order to assist with the preparation, cooking, and presentation of produce. You will be responsible for running a section with the assistance of the Commis Chef.

What You’ll Do (but not limited to):

• Manage and maintain a section with the assistance of Commis Chefs.
• Prepare and cook food to the restaurant specific standards.
• Develop, mentor, and supervise the Commis Chef section.
• Implement wastage controls, section stock control and rotation.
• Complete the cleaning schedule for the kitchen.
• Have detailed knowledge of the full menu along with its respective ingredients.
• Adhere to all policies, procedures, standards, specifications, guidelines and training programs set by the company and SFA. Achieve and maintain all health/safety requirements. Document cleaning schedules and temperature records.
• Report maintenance issues to your immediate supervisor.
• Use raw materials/ingredients in the correct and proper order.
• Give a detailed description of all dishes.
• Provide full support to the Head and Sous Chef, as well as other colleagues.
• Smoothly and efficiently run your section and complete tasks in a timely manner.
• Regularly and consistently train, coach, and support Commis chefs.

• Minimum 3 years of relevant working experience with valid basic food hygiene certificate or equivalent.
• A good command of spoken and written English.
• Basic Microsoft Office knowledge.

Trend Analysis

• Stay informed about culinary trends and ingredient availability to inform menu development and innovation

Concept Development

Job Requirements:

• Minimum 8 years of relevant experience in Modern European cuisine
• Proven experience as a Chef de Cuisine or similar leadership role in a culinary environment
• Strong knowledge of food trends, culinary techniques, and industry best practices
• Excellent leadership and team management skills
• Guide and train junior chefs in the team; identify and address ongoing training needs

· To ensure the quality of all food (refers to raw and cooked) and condiments received from suppliers, is well-maintained through proper storage and usage

· To ensure compliance of SFA/other authorities’ guidelines regarding packing, personal & food hygiene and safety, housekeeping, and cleanliness & tidiness of work area

· Responsible for the hygienic and safe preparation of food as per Food Hygiene standards and legislated health and safety requirements within the workplace

· Assisting the Sous Chef to ensure that there is minimal wastage, on time ordering for freshness of ingredients, sufficient stock in place

· Min 5 years’ experience in Pastry/Cakes production

A Sous Chef reports directly to the CDC

The Sous Chef is responsible for planning, directing, controlling, coordinating and participating in the day-to-day operations of the kitchen. He or she is accountable for the production of all food products required by the entity. Ensures that the products are of the highest quality or surpassed at all times.

The Sous Chef role includes the following but not limiting to:

• Support the Chef de Cuisine and the BOH team ensuring smooth operations at all times.
• Assist the Chef de Cuisine in menu engineering, menu changes and their implementations.
• Manage and oversee all activities in the kitchen, including food preparation/production, management and training of kitchen staff.
• Ensure efficient, cost-effective operations and profitability of food production.
• Supervise and inspect all food preparation/cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order (equipment maintenance).
• Assure adherence of all standards of food quality, preparation, recipe following and presentation in conjunction with the Entity’s specifications in a timely manner
• Curate and provide accurate recipes with appropriate training to the junior chefs enabling them to deliver food products of consistent quality.
• Assist team members with their job functions and provide on the job training when necessary so that only the best quality food is always served.
• Estimate food consumption to plan purchases and requisition of raw ingredients.
• Minimise waste and spoilage of raw ingredients to maintain COG budget.
• Prepare an efficient daily work/prep list and train junior chefs to prioritise mise en place production with proper time management training.
• Foster and promote a cooperative working climate, maximising productivity and maintaining employee morale.
• Monitor holding/storage procedures, stocks/food rotation, and ensuring food service sanitation standards are met.
• To delegate inventory tasks to junior chefs at the end of month, giving them the necessary training and resources.
• Kitchen on-boarding, introduction to the kitchen, stations, workflow and organisation.

REQUIREMENTS:

• Degree/Diploma/Professional Certificate in Culinary Arts
• At least 5 years of working experience in the related field
• Possess food hygiene and safety certification or equivalent
• Experience in running a small kitchen team of cooks
• Ability to communicate in spoken and written English
• Proficient in Microsoft Office
• Specialization in specific entity’s cuisine will be a bonus

You will report directly to the Sous Chef and are required to work closely with the Sous Chef and Chef de Cuisine in order to assist with the preparation, cooking, and presentation of produce. You will be responsible for running a section with the assistance of the Commis Chef.

What You’ll Do (but not limited to):

• Manage and maintain a section with the assistance of Commis Chefs.
• Prepare and cook food to the restaurant specific standards.
• Develop, mentor, and supervise the Commis Chef section.
• Implement wastage controls, section stock control and rotation.
• Complete the cleaning schedule for the kitchen.
• Have detailed knowledge of the full menu along with its respective ingredients.
