Duties

1) Washing and Cutting of vegetables

2) Cutting and marination of meat

3) Cooking of food (stir fry, deep fry, steaming)

3) Maintenance of all kitchen equipment

4) Maintain kitchen hygiene & cleanliness

5) Manage kitchen staff

6) Daily stock take and ordering

7) Checking of invoices and goods upon arrival

Responsibilities:

• Assist the Chef in menu planning, food preparation, and cooking.
• Supervise and train kitchen staff, fostering a positive and collaborative team environment.
• Ensure all dishes are prepared to the highest quality standards and presented according to specifications.
• Monitor kitchen operations to maintain food safety, hygiene, and cleanliness.
• Ensure compliance with health and safety regulations, company policies, and industry standards.
• Train and mentor staff on safety protocols and best practices, fostering a safety-first culture.
• Conduct regular safety training and drills to ensure staff preparedness for emergencies.
• Manage inventory and assist with ordering supplies as needed, ensuring proper stock levels.
• Collaborate with the Chef to maintain food cost controls and minimize waste.
• Help develop and implement new recipes and menu items.
• Maintain organization in the kitchen, ensuring equipment and tools are used properly.
• Assist in scheduling kitchen staff and managing labor costs.
• Address any issues or concerns that arise during service to ensure smooth operations.

Requirements:

• At least two (2) years of working experience in the related field and in similar capacity
• Complete understanding of all cookery
• Thorough understanding of all occupational health & safety issues
• Flexible and energetic
• Excellent communicator, team player and with leadership qualities
• Has thorough knowledge of all food products - local and imported

* 5-day work week

Head Chef responsibilities include:

Controlling and directing the food preparation process and any other relative activities

Constructing menus with new or existing culinary creations ensuring the variety and quality of the servings

Approving and “polishing” dishes before they reach the customer

Job brief

Detailed Responsibilities

- Assist the head chef in daily kitchen operation

- Cutting, steaming, frying, etc.

- Washing and handling raw materials such as vegetable, seafood, pork, poultry, beef, etc.

- Periodically cleaning & maintenance of fridge, freezer, cooking area, exhaust hood, drainage, etc.

- Periodically review menu with the management and design new promotion dishes

- Other ad hoc duties assigned by the management

Requirements

- Relevant experience

- Able to get along with team members

- Needs to work on split shift daily: 10am – 2pm & 6pm – 10pm

- Needs to work on weekends & public holidays

- OT may be required with short notice to cover other colleagues’ MC or leaves

- Able to work in a Non-Aircon environment
