The role of the Bartender is to provide our guests with a friendly, professional and enjoyable beverage dispensing and dining experience at the bar.

KEY RESULTS AND TARGETS
Quality & Consistency
Efficiently dispensing our cocktails and other beverages to the highest quality and consistency standards is the primary goal of this role. You must always perform this role only using approved techniques, correct measuring devices and hygienic practices at all times.
Cleanliness
A clear, uncluttered section represents a clear uncluttered mind. If your section is always neat and tidy it is a reflection of good time management and efficient functionality. It also shows that you are pre-empting potential problems and dealing with them before they become problematic.
Functionality and Speed
You must be prepared prior to service beginning, this means making sure you have enough mise en place done, all of your stock lines are replenished and all equipment you require is functioning well. You must always complete the set up and pack down checklist to ensure this.
Having everything prepared prior to service allows you to work faster and more efficiently.
Product Knowledge
You must have an intricate knowledge of all product lines and equipment that you are working with.
Tasting
You must taste your cocktails to ensure that consistency is being met.
Measuring Performance
Build ups
During service if you have a heavy build up of tasks for service, dirty glassware or dockets, it is a sign that you are not functioning efficiently.
You must organize your time equally between:
- Diners: make sure that no one is in need of your attention
- Dockets: don’t allow these to pile up.
- Dishes: don’t allow these to pile up either. If the section is starting to look messy, you have to ensure that it gets dealt with either by yourself or by the floater or by the service team members.
Recommendation and Guidance
You must be able to recommend and guide your peers and customers in terms of order selections. The detail to which you can do this relies heavily on the depth of your product knowledge
DUTIES AND RESPONSIBILITIES:
The following list includes aspects of quality and service, personnel this position is responsible for, aspects of productivity and morale, presentation, use of management systems and in some cases financial performance.
The Bartender is responsible for;
- Ensuring customers dining at the bar receive the complete Loco dining experience
- Offering and topping of waters
- Ordering and service of drinks at the bar
- Ordering of food, setting of cutlery
- Dispense of drinks for the restaurant
- Maintaining quality and consistency of drinks
- Keeping up to date with cocktails, spirits & wine list
- Maintaining cleanliness/tidiness of bar
- Maintaining cleanliness around customers dining at bar
- Ensuring bar is always kept wiped
- Ensuring all drinks on the bar are presented on a coaster, except wine glasses
- Ensuring no empty plates or glasses are left on the bar
- Re-stocking of bar, ensuring bottles are straight, labels are straight
- Stocking and cutting of fruit
- Ensuring rubbish is recycled
- Following opening/closing procedures
- Assisting supervisor with other jobs that they might have
