This position is for the specialty fats business unit in Wilmar International. The job responsibilities include but not limited to virtual discussions and meetings, annual business trips (3 - 4 times per year) together with written reports submission. The projects focus could be concurrently worked on after approvals are obtained.
Job Responsibilities:
You will be responsible for a range of product development with your advisory focus on:
1. Identify market trends of the food industry globally & regionally and advise on how to incorporate these trends into our products or services.
2. Advise on the latest trends of research and development of specialty fats, suggesting ways to improve and innovate.
3. Provide expert advice on ways to develop or improve the product in safety, quality, flavor & taste, nutrition, sustainability, etc.
4. Provide training on trends, lipid technology, ingredients etc. for staff & clients; troubleshooting for selected cases.
5. The specific responsibilities of your role as bakery fat advisor include:
· Guiding the formulation design and production process based on in-depth understanding of fat crystallization and application properties.
· Advise on the development of a range of emulsion systems, including water-in-oil, oil-in-water, multiple emulsifications, and low-fat emulsification.
· Enhance the flavor of bakery fats by means of fermentation, enzymatic technology etc. to enrich the flavor of bakery fats, especially to retain more flavor after product is baked.
6. The specific responsibilities of your role as nutrition lipid advisor as follows:
· Guide the development of novel techniques for enzymatically structured lipids. Optimizing lipid structures and properties to enhance their functionalities and nutritional values.
· Guide the research on the nutritional benefits and functionalities of developed lipids. Provide advice for different studies at various levels, including cell cultures, animal models, and clinical trials.
· Advise on the development of specialized medical nutrition products and dietary supplements. Ensure compliance with regulatory standards and guidelines.
7. The specific responsibilities for your role as confectionery fat consultant include:
· Guide the chocolate fat development project focused on fat crystallization and its effects on chocolate quality and texture.
· Optimize chocolate formulations using innovative lipid technology to enhance product stability and consumer experience.
· Advise on chocolate development & production, the processing & quality control of cocoa raw materials.
8. The specific responsibilities for your role as frying fats and oils advisor as follows:
· Provide advice on holistic solutions for food industry clients on food matrix construction to improve fried food sensory and shelf-life.
· Sharpen the technique of oil processing to improve stability and reduce off flavor.
· Share experience working with McDonald's, YUM, PEPSICO etc.
Job Requirements and Qualifications:
1. Bachelor’s degree or above in food science or related fields
2. Minimum 20 years working experience focusing on the above subjects or part of them
3. Strong industrial R&D background or technical/production background
4. Excellent written and oral communication skills; proficient in spoken and written English
5. Flexible, approachable and innovative
