As part of the pre-opening team, the successful candidate will play a pivotal role in setting up, maintaining and enhancing the Resorts' IT systems. Key Responsibilities

• Working with the IT Manager, the incumbent will set up and ensure that the Resort's IT systems, including our Hotel Management System, are updated based on the current release as guided by our corporate office.

Main Duties and Responsibilities

We are seeking a passionate culinary professional to join our pre-opening team as our Chef de Partie.

As part of the pre-opening team, the incumbent will help embed and strengthen our brand’s service & quality standards and establish the relevant protocols to ensure a successful opening.

Key Responsibilities

• The incumbent will assist and supervise the agreed standard of food service during shift.
• Liaise and co-operate effectively with all other associated members of staff.
• Promote the safe use of the kitchen and its equipment.
• Upkeeping the hygiene standards in the kitchen.
• Ensure all relevant food controls, correct temperatures are logged and the agreed standards of food preparation and presentation are adhered to at all times.
• Attend any training that is required by the company.
• To provide a friendly, courteous, quick, efficient and professional service at all times.
• Demonstrate a high standard of personal appearance, always wearing clean Chef’s whites to be changed daily or when necessary. Ensure good personal hygiene.
• Check all prepared mis en place and food stocks (including dry stores) and replenish as necessary and inform the Chef de Cuisine or Executive Sous Chef of any relevant shortages.
• Be aware of all relevant food suppliers and their products. Be in charge of ordering when food supplies are running low in stock in store or cold room.
• Supervise the smooth and efficient service and production of food from the department by working and liaising with the restaurant service staff and ensuring all necessary prep work is completed prior to the commencement of service.
• Control wastage by maintaining the correct stock levels and rotation from dry stores and avoid the over production of food and mis en place.
• To assist other sections of the kitchen in the production and service of food or the cleaning down of the section as and when required.
• To ensure all working areas of the kitchen, dry stores and refrigeration are always maintained in a clean and hygienic condition, and especially after the shift has finished.
• Ensure that recipes are maintained and updated.
• To maintain constant quality control of all food prepared and cooked ensuring it is to the Executive chef’s and restaurant standards.
• To provide a clear handover during shift changes
• To report any problems, accidents or kitchen equipment defects to the Executive Chef.
• To make yourself aware and notify your staff to all menu changes, specialties, function menus and changes to standards prior to the commencement of service.
• Any other tasks as assigned by the Executive Chef.

Job Requirements

• Professional qualification in a related field
• 3 to 5 years’ experience, preferably in the hospitality industry. Pre-opening experience would be useful.

Key Responsibilities

• The incumbent will assist the Executive Chef in preparation of ingredients for cooking, including portioning of food ingredients, chopping, and storing food before service.
• Weigh, measure, and mix ingredients according to recipes set by the Executive Chef using various kitchen utensils and equipment
• Wash and peel (if required) fresh fruits and vegetables to prepare them for cooking or consumption
• Prepare and cook food according to recipes
• Serve food (for example, soup, desserts, sides, entrees) in proper portions onto dishes, plates, mugs, and bowls, ensuring proper plate appearance
• Ensure proper portion, arrangement, and food garnish for service to guests
• Ensure food storage and cooking areas are clean after each shift/service
• Prepare all potentially hazardous foods at the correct temperature according to the HACCP guidelines
• Follow appropriate personal hygiene procedures to ensure food served to guests is safe for consumption
• Follow and ensure compliance with food safety and handling policies and procedures
• Communicate any assistance needed during busy periods to the Chef to ensure optimum service to guests
• Ensure the quality of the food items delivered by suppliers and notify reporting supervisor if a product does not meet specifications
• Check and ensure the correctness of the temperature of appliances and food using thermostats and thermometers, including monitoring freezer systems, such as fans, drains, and doors, for proper operation, and report issues or problems to reporting supervisor.
• Maintain up-to-date knowledge of food safety policies within the kitchen areas.
• Ability to work under demanding and strenuous situations
• Monitor the quantity of food that is prepared and the portions that are served in to control food waste and ensure that food wastage is controlled.

Main Duties and Responsibilities

The Security Supervisor is responsible for overseeing the operations of the Security team, and critically, ensuring the safety and security of the guests of the Resort. Together with the rest of the Security team, the incumbent will implement security protocols, respond to emergencies, and undertake other security-related matters.

Key Responsibilities

• Operations: Responsible for regular inspections and patrols of the premises, including both public and back-of-house areas. As part of this role, you will also be responsible for monitoring our security systems to detect and prevent any security breaches.
• Incident Management and Reporting: Respond promptly to security incidents, emergencies, or disturbances, and take appropriate action to resolve issues. The Security Supervisor will also be responsible for preparing incident reports, and maintaining accurate records of security activities and incidents.
• Regulatory Compliance: Ensure compliance with all statutory regulations and reporting requirements. You will also assist to maintain updated security records and other related documents to enable the accurate monitoring of security in the Resort
• People Management: Lead, mentor, and manage a team of security officers. You will also, where necessary, assist in scheduling and assigning duties for the team.

Job Requirements

• Diploma / Nitec or an equivalent professional qualification in Security Management, or a related field
• 3 to 5 years’ experience in Security Management, preferably in the hospitality industry. Experience in pre-opening security setup and implementation would be useful.
• Extensive knowledge of security policies, procedures, risk management and emergency response.
• Strong interpersonal, communication and organizational skills.
