A restaurant head captain ensures that all centrepieces are on the tables properly and that linens, silverware and glasses are clean. Restaurant captains often have a managerial role. It is their job to ensure all hosts and waiters are adequately trained and informed of the restaurant's policies and knowledge about menu items and daily specials.
