As the Production Supervisor, you will oversee the day-to-day operations of our butchery production facility. You’ll manage a team of skilled butchers and production staff, ensuring the production of high-quality charcuterie products that meet our company’s standards. You will play a critical role in ensuring the efficiency of the production process, maintaining quality control, and driving innovation in our charcuterie range.

Key Responsibilities:

• Supervise and coordinate the daily operations of the butchery production team, ensuring smooth and efficient production of meats, with a focus on charcuterie products such as hams, sausages, and other cured meats.
• Oversee the preparation, seasoning, curing, and smoking processes, ensuring products are consistently made to specification.
• Train, mentor and develop team members, fostering a culture of high standards and continuous improvement.
• Ensure compliance with food safety, health, hygiene regulations, and maintain a safe working environment.
• Monitor production schedules and inventory levels to ensure timely delivery of products.
• Maintain strict quality control procedures, ensuring that all products meet company and industry standards.
• Work closely with the management team to identify areas for improvement and innovation within the charcuterie production process.
• Assist with troubleshooting and resolving any production-related issues, ensuring minimal downtime.

Requirements:

• Proven experience in a commercial butchery production environment, with a strong emphasis on charcuterie (e.g.,hams, sausages, cured meats).
• At least 3 years of experience in butchery or food production, with a solid understanding of meat processing, curing, and smoking techniques.
• Strong leadership and team management skills, with experience supervising and developing a team in a fast-paced environment.
• In-depth knowledge of food safety regulations, quality control standards, and workplace health and safety.
• Ability to work under pressure while maintaining attention to detail and high-quality standards.
• Excellent organizational and time management skills, with the ability to prioritize and meet deadlines.
• Strong communication skills and the ability to collaborate effectively with colleagues across departments.
