 Undertake menu planning

 Oversee and participate in the preparation and cooking and serving of main meals, snacks, cakes, etc. in accordance with specified menus.

The Senior cook will prepare meals and follow establishment recipes. Duties include preparing ingredients, adhering to the restaurant menu, and following food health and safety procedures. • Assist Senior Contracts Manager in tender/contract review and finalizing the tender sum.
• Help with contract administration, progress claims, and liaise with the Client's representative on claims and variation costs.
• Compile subcontractor quotes for review and approval.
• Keep Contract Manager updated on all contractual and site matters.
• Review and verify subcontractor/supplier claims and prepare payment certificates for approval.
• Prepare final accounts and variation submissions.
• Maintain quality systems in the Contracts Department.
