1. Job Description

• Produce all items relating to the menu to the establishment standards to satisfy customers' expectations
• Maintain a high standard of hygiene and health and safety
• Ensure all equipment failure and hazards are reported to the Head Chef or another senior member of staff.
• Ensure a strict control on food waste and reporting any waste in the correct procedure
• Ensure a correct standard of stock rotation, making sure food products are used prior to the best before date
• Ensure all portion controls are strictly adhered to
• Ensure the highest standard of food production and presentation at all times as per standard of performance manual an recipes
• Ensure work surface, refrigeration, stores are cleaned and sanitised before end of shift
• Ensure the high standard of personal appearance at all times, including the wearing of the correct protective clothing as laid down in the codes of practices
• Ensure a close professional working relationship with other members of staff at all times
• Ensure the kitchen is secure, clean and safe before going off shift
• Produce recipes and costing in conjunction with the Head Chef as required, assisting to maintain that monthly profit margins are met.
• Attend all team briefs as required
• Participate in monthly physical stock take of the Restaurant, including but not limited to plates and utensils

2. Job Requirements

• Minimum 3 years of relevant experience in Western and Asian cuisine (preferably Japanese)
• Possess good hygiene and personal grooming standards
• Able to work in a fast - paced environment
• Able to work split shifts

ROLE RESPONSIBILITIES

• Takes care of daily food preparation and duties assigned to meet the standard and the quality set by the company.
• Always ensure compliance with all legally required hygiene and safety practices and maintain high standards of cleanliness and safety in the kitchen and other relevant areas.
• Follow the instructions and recommendations from the immediate superiors to complete the daily tasks.
• Coordinates daily tasks with the Junior Sous Chef.
• Assist to supervise line cook or commis, as required.
• Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
• Ensure that the production, preparation and presentation of food are of the highest quality at all times.
• Ensure highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis.
• Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.
• Full awareness of all menu items, their recipes, methods of production and presentation standards.
• Follow good preservation standards for proper handling of all food products at right temperature.
• Check expiry dates and proper storage of food items in the section.
• Ensure effective communication between staff by maintaining a secure and friendly and non-political working environment.

ROLE REQUIREMENTS

• At least 2-3 years’ experience in a similar capacity.
• Experienced Leading Cooks are also welcome to apply.
• Working experience in the similar industry will be an added advantage.
• A valid food hygiene certification is mandatory.
• Flexibility to work rotating shifts, including weekends and public holidays.
• Excellent communication skills, with the ability to engage effectively with guests, colleagues, and third parties, positively representing the brand and the company.

Summary

This position is responsible for maintaining high standards of food preparation and service in the appointed kitchen(s), according to the standards set by the Management.

Job Responsibilities

• Stock up the assigned kitchen with raw materials and ingredients on a daily basis.
• Be familiar with the use of all electrical and mechanical equipment in the kitchen and observe safety precautions when handling them.
• Master all basic cooking methods like cutting of ingredients and preparing daily mise-en-place for the assigned station.
• Prepare food items as per standard recipe cards whilst maintaining portion control and minimizing wastage.
• Apply necessary precautions with regards to the hotel food safety and hygiene standards (HACCP).
• Clean and maintain all equipment within the food production area.
• Promptly report any hazards, unsafe working conditions or equipment which requires repair or maintenance to immediate supervisor.
• Ensure that all safety, health, security and loss control policies and procedures and Government legislation are adhered to.
• Be well versed in hotel fire & life safety/emergency procedures.
• Attend all briefings, meetings and trainings as assigned by management.
• Maintain a high standard of personal appearance and hygiene at all times.
• Perform other reasonable duties assigned by the assigned by the Management.

• Ensure profitability by maintaining an accurate record of baking operations.
• Manage needed supplies and inventory levels.
• Direct and supervise the production staff’s activities to make sure that products are up to standards.
• Ensure fillings of bread is standardized for all products
• Decorate baked products using glaze, icing and other toppings to achieve a finished appearance.
• Assess the quality of raw materials before baking.
• Conduct research to develop recipes for new products.
• Maintain portion control and quantities of preparation to minimise waste
• Ensure daily opening and closing duties in the outlet are properly executed
• Supervision of food preparation and food production to ensure that food quality standards are met company SOP
• Ensure kitchen operations, food safety and hygiene standards as set in our SOP
• Recruiting& hiring of restaurant staff
• Responsible for induction training and on the job training of new employees and also newly promoted staff
• Train and demonstrate cooking techniques and proper equipment usage to staff
• Responsible for employee's performance and discipline
• Handling the repair & maintenance of restaurant equipment
• Backend duties: stock takes, scheduling etc
• Handle any other duties assigned by Head Chef
• Ensure staffs follow company safety SOP

Summary

This position is responsible for the training and supervision of a team of cooks in the appointed sections and preparation of food observing all standards as set by the hotel and regulated by local authorities.

Job Responsibilities

• Train and supervise the work of kitchen personnel in the respective sections.
• Ensure personal cleanliness and proper deportment of all team members.
• Produce high quality food in a specified area of the food preparation and ensure that this is also practiced amongst all team members.
• Check the taste, temperature and visual appeal of food items prepared to ensure quality and portion are consistent and as per specification set out.
• Ensure that all equipment and perishable items are stored in its designated place and is done in the most hygienic manner.
• Prevent the use of contaminated products in any phase of food preparation and prevent team members who are ill or suffering from an infection from taking part in the preparation or handling of food.
• Ensure that team members follow the hygiene and sanitation procedures when handling food, equipment and utensils.
• Work closely with Stewarding in maintaining the cleanliness of the kitchen.
• Ensure that all safety, health, security and loss control policies and procedures and Government legislation are adhered to.

Qualifications / Requirements

• Minimum Primary school education.
• Additional certification(s) from a reputable Culinary school will be an advantage.
• Minimum 2 years of relevant experience in a similar capacity.
• Good reading, writing and oral proficiency in English language.
• Good communication and customer contact skills.
• Ability to work well in stressful & high-pressure situations.
• Knowledge of food and health safety standards including HACCP.
