MAIN DUTIES:

Position Requirements

• Responsible for the preparation and checking of food according to the Legendary Service Training, as well as assisting the Sous Chef/ Junior Sous Chef wherever possible
• He/She is to prepare and submit all food requisitions and transfers to the Sous Chef/ Junior Sous Chef to ensure proper controls.
• He/she is to co-ordinate with the stewarding department for day-to-day operation requirements and cleanliness.
• Check the quality of raw materials in his assigned areas, as well as their storage, handling and usage.
• To ensure constant rotation of all stocks in the kitchens.
• Assist in other food production areas as and when required.
• Maintain a detailed Knowledge of the full menu and be able to explain dish descriptions.

Administration

• Technical knowledge and job skill training for all food produced within his area and the effective use of provided materials.
• Communication of local requirements, food sanitation laws, safety regulations and other to all staff.
• Guide Demi Chef and Cook 1 and Cook 2 in decision- making.
• Keep the Sous Chef and Junior Sous Chef informed about all aspects of assigned section, including equipment, working environment, staff problems and departmental relations.
• To carry out checks of all refrigerators and freezers at least twice daily for proper functioning and cleanliness.
• Ensure full co-operation and good relationship with all other service colleagues and department.

1. Learn Sushi making skill from experienced masters who have worked in the industry for over 25 years

2. Receive one-time "graduation bonus" of SGD2,000 (within 3 months) / SGD1,000 (within 6 months) upon confirmation for the succesfull candidates and at least 2 years contract for full-time job

Job Description

1. Learning the art of making Sushi and Maki

2. Creating Sushi, Sushi Rolls, Slicing Sashimi

3. Doing preparation work, making important sauces and taking care of stock freshness

Requirements

1. Minimum 1 year of chef experience is beneficial even if you do not have Sushi experience

2. Willing to learn the basic of Sushi dishes and the technique

3. Good attitude and a team player

Candidates with some basic Sushi Bar experience can qualify for higher salary and incentives.

Key Responsibilities

• Ensure the quality and quantity of items ordered.
• Ensure proper storage of items ordered and take stock weekly.
• Work with the Chef on items needed and with Procurement to order these items.
• Ensure accurate deployment of clients’ orders daily.
• Be meticulous to ensure no item is missed.
• Coordinate with Operations on delivery timing.
• To adhere strictly to all established standard operating procedures.
• To wash, cut, and prepare food designated for cooking, and to verify that the prepared food meets the required quality and quantity.
• Maintain kitchen cleanliness, hygiene, and safety.
• Perform all other ad-hoc as assigned by management and supervisors.

Responsibilities:

• Takes care of daily food preparation and duties assigned by the superiors to meet the standard and the quality set by the Restaurant
• Follows the instructions and recommendations from the immediate superiors to complete the daily tasks
• Coordinates daily tasks with the Sous Chef
• Responsible to supervise junior chefs or commis
• Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met
• Ensure that the production, preparation and presentation of food are of the highest quality at all times
• Ensure highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis
• Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation
• Full awareness of all menu items, their recipes, methods of production and presentation standards
• Follows good preservation standards for the proper handling of all food products at the right temperature
• Operate and maintain all department equipment and reporting of malfunctioning
• Ensure effective communication between staff by maintaining a secure and friendly working environment
• Establishing and maintaining effective inter-departmental working relationships
• Have excellent knowledge of menu creation, whilst maintaining quality and controlling costs in a volume food business
• Personally responsible for hygiene, safety and correct use of equipment and utensils
• Ability to produce own work in accordance with a deadline and to assist and encourage others in achieving this aim
• Checks periodically expiry dates and proper storage of food items in the section
• Consults daily with Sous Chef and Executive chef on the daily requirements
• Guides and trains the subordinates on a daily basis to ensure high motivation and economical working environment.
• Should be able to set an example to others for personal hygiene and cleanliness on and off duty
• Daily feedback collection and reporting of issues as they arise
• Assess quality control and adhere to hotels service standards
• Carry out any other duties as required by management

Requirements:

• 3 years of relevant experience in the F&B industry
• Professional qualifications in culinary or relevant kitchen work experience are mandatory
• Great cooking skills, creative in developing specials, and excellent plating skills
• A cool head and ability to work in a fast-paced environment
