As we expand our culinary horizons, we're seeking a passionate and driven Kitchen Operation Manager to play a key role in managing the operation.
Role Description:
As a Kitchen Operation Manager, you will be the heart and soul of our kitchen. Overseeing day-to-day operations with a focus on excellence. From menu planning to kitchen efficiency, you'll lead a team of culinary professionals to deliver mouthwatering dishes that showcase the richness of Filipino Cruisine.
Key responsibilities:
1. Ensures that all food items produced by each section adheres to standard recipes and cooking procedures.
2. Ensures that all personnel adhere to productions of BOILING, FRYING and MARINATION procedures.
3. Ensures that all personnel uses necessary equipment, small-wares, tools and measuring devices.
4. Performs and conduct checking Gerry's Grill GBA checklists.
5. Performs and conduct Daily Shift Briefings prior to start of operations.
6. Checks and approve Periodic Thawing Guides prepared by the GERRY's Grill ASM1.
7. Ensures that personnel followed standard Stocking guide.
8. Coordinate closely with the ASM1 / Branch Manager for his daily market list requirements (Vegetable Ordering).
9. Checks the quantity requested placed by the Stockman prior to ordering.
10. Ensures all machineries (Ventilation and Refrigeration) are maintained and working in good conditions.
11. Monitors periodic PM’s of Gas Line, Sewer Line, Exhaust systems, Refrigeration.
12. Schedule Monthly General Cleaning of BOH.
