Position Overview
The Executive Chinese Chef will be responsible for contributing to menu creation, managing and training the kitchen team to deliver consistent food quality aimed at creating great experience for guests, manage food cost controls through good management of orders and supplies to Capella. You will be responsible for performing all assigned culinary tasks to the highest standards in accordance to Capella standards and leading the entire Chinese Kitchen and Chinese Banquet Kitchen.
The Role
A. Manage Food and Beverage Operations
1. Prepare in accordance with quality, availability and seasonality and ensure market lists are completed on a daily and weekly basis.
2. Assist and help coordinate all menu planning and implementation.
B. Review Continuous Improvement Activities
1. Create the menus and produce recipes for approval of Executive Chef. Prepare sample tasting for management if and when required.
2. Inspect food quality and portions to ensure required standards are met.
C. Monitor Customer Experience Standards
1. Develop a presence in your designated restaurant, meeting and greeting guests.
2. Ensure food standards and presentation are maintained and always improved.
D. Manange Human Resources, Finance and Report Management
1. Create and submit weekly staff rosters for Executive Chef approval.
2. Responsible for recruitment and selection as well ad development of colleagues within the department.
Talent Profile
1. At least 10 years of experience specializing in Chinese Cuisine in a 5 star luxury hotel.
