- Good knowledge of Japanese ingredients (Seasonal fish, meat and vegetables)
- Good knowledge of Japanese authentic cooking style
- Maintain high hygiene standards in all cooking areas(Sushi counter and Kitchen)
- Monitor food stock and place orders, as needed
- Good contacts with suppliers for Japanese products
- Good knowledge of various sushi types
- Ability to work both fast and accurately
