Job Descriptions

  • Directing and controlling the daily restaurant operations by co-operating with Head Chef to maintain the highest quality of food and services, positive guest relations and ensure products are consistent with company quality standards.
  • Being responsible for sales and profit targets. Preparing sales reports daily/weekly/monthly, reporting to the Director, planning, and analyzing restaurant sales levels and profitability.
  • Creating the restaurant’s promotional plans and schedules, take actions, evaluate and improve activities which acquire new customers, leverage current customers and boost the restaurant sales by co-operating with the management & marketing team.
  • Creating and updating drink list that enhances the cuisine by co-operating with Sommelier.
  • Observing and having a commitment to product development by co-operating with the management and Head Chef.
  • Supervising daily reservations, arranging guest seating and staff assigning. Supervising guest database by using and updating guestbook to give high-quality service, including arranging dishes according to guests’ preferences.
  • Recruiting, interviewing, hiring team members, conducting performance appraisals, taking disciplinary actions, and motivating and training staff to drive team performance with Head Chef. Managing and handling staff problems/concerns with the Head Chef.
  • Serving as a role model to demonstrate appropriate behaviours.
  • Directing inventories/orders of food and drink, and controlling cost, overseeing purchases from suppliers with Head Chef.
  • Ensuring good health and safety practices of employees and guests.
  • Managing and maintaining facilities and equipment properly with Head Chef.
  • Reporting and liaising closely with Managing Director.
  • Controlling P&L, maintaining inventory, managing labour, reviewing financial reports and take appropriate actions. Creating and enforcing restaurant policies, targets, and KPIs.
  • Consistently seeking new ways to improve services by any means.
  • The scope and duty shall not be limited to what had been stated above and shall be adjusted accordingly to the existing situation of the company and working environment.

Job Requirements

  • 3 years of service experience at the Fine Dinings or Hotels
  • Knowledge of wine, Japanese Sake and other alcholic beverages.
  • Passionate and team-oriented character
  • Non-selfish and willing-to-learn attitude
  • Experience working as a Restaurant Manager is advantageous.
  • Experience working in Japanese restaurants is advantageous.
  • Able to communicate in English

Working hours

  • 5 days work week
  • 11am-22:30pm(1.5hr break) daily
