Assistant Commissary Manager, Food Production

  • Responsible for managing and leading our Commissary Department to ensure smooth production operations, coming out with quality existing and new products and maximizing profitability thru optimal costs management
  • Ensure production orders are fulfilled timely and efficiently through tight quality control monitoring, staff guidance and close monitoring of production machinery for machine efficiency
  • Ensure department inventories for food manufacturing are managed efficiently to prevent shortage of ingredients or materials for department operations
  • Educate and guide production subordinates when necessary to perform at desired levels to achieve departmental and organizational objectives
  • Generate and maintain regulatory documents including SOP, HACCP plan, manufacturing process flow, ingredient and product description, nutrition facts table, declaration letter used for customer specific requirement and global product registration purposes
  • Establish comprehensive understanding and updated knowledge of the regional and international regulations and standards applicable to the company products and upkeep the relevant regulatory database/ handbooks
  • Apply and maintain authorities’ licenses for business operation and new products
  • Assist in projects and provide technical expertise in food ingredients, process, packaging, shelf life, food safety and regulations

    Requirements:
  • Diploma with at least 10 years of Relevant experience in a food production facility is required
  • Knowledge of ISO standards, HACCP and food hygiene standards is required
  • Research and development of food products, preferably in snacks applications is a plus
  • Proactive, meticulous to details including confidential information
  • Team player with strong interpersonal and collaborative skills with ability to work in cross functional matrix team
  • Willingness to strive for continuous improvement
  • Able to work night shift from 8.30pm to 6.30am / weekend 8pm to 7am
