Odette is award-winning Chef-Owner Julien Royer’s first restaurant, located at the iconic National Gallery Singapore. Working with the world’s best boutique producers, Odette serves Modern French cuisine that is guided by Royer’s lifelong respect for seasonality, terroir and artisanal produce sourced from boutique producers around the world. Odette is named in tribute to Royer’s grandmother who taught him how some of the most remarkable dishes can come from the purest ingredients, and believed in ensuring that the fundamental pleasures of enjoying a meal are delivered in the most thoughtful, welcoming and hospitable manner. This ethos has directed every aspect of the Odette experience, harking to a new age in fine dining.



The Front-of-House team is looking to welcome a Commis Service into its ranks. Having the necessary product knowledge and strong people acumen skills are the backbone to a strong restaurant service. Attention to detail will be crucial to ensure that our guests leave with an awesome experience that leaves them yearning for more.


Your responsibilities include:

  • Maintaining good lines of communication between the Chef de Rang and the kitchen
  • Assisting in setting up the kitchen passes – starter, main course and pastry – as instructed by chef
  • Assisting the Chef de Rang and senior staff members with the preparation of the restaurant for service
  • Understanding and upselling menu dishes to the customers
  • Participating in the daily service operations of the restaurant and understand how the role ensures the smooth running of the restaurant
  • Recording any losses through spoilage or waste and reporting such losses to the Head Waiter immediately
  • Taking good care of all equipment in the restaurant
  • Helping guests and staff members whenever possible and required

We are looking for:

  • Individuals who are passionate about delivering the highest levels of service with a desire to learn and work hard
  • Welcoming candidates with no experience but are keen to develop a career in fine dining to apply in
  • Individuals who place a high emphasis on being well-groomed and possesses good communication skills
  • Team players in a upbeat, fast-paced working environment
  • Those who are keen to progress their career in fine-dining and French cuisine
