JOB SCOPE
- Support in the day-to-day operations of your department and be accountable for the conduct of the business.
- Ensure that the Standard Operating Procedures are always maintained, and guests are accorded service of the highest quality.
- Ensure that all beverages are always handled in the most hygienic manner with no compromises and full compliance of the law.
- Managing inventory and supplies at the restaurants, as well as overseeing the ordering and delivery process. Whist maintaining a strong relationship with key vendors and partnerships.
- Support and follow strategies to improve the restaurants performance and increase profitability.
- Ensure compliance with health, safety, sanitation and alcohol awareness standards.
- Report any unethical, suspicious or unlawful practices in the restaurant to the management immediately.
- Adhere to the laws of Singapore and always cooperate with government agency representatives.
- Ensure that the restaurant and store areas are properly maintained, and the security is never compromised.
- Monitor all vendor invoices and ensure against fraudulent activities.
- Not engage in any unofficial transactions with any of the providers/suppliers.
- Treat all staff with utmost respect and dignity.
- Support the Executive chef in creating bespoke best-in-class menus for the restaurant and continue to create and evolve the menu.
- Solicit feedback from guests to the management team.
JOB REQUIREMENTS
- Minimum 4 years Sommelier roles in fine dining/ luxury operation
- International or Opening experience is an advantage
- Certification as a Sommelier or degree in hospitality is a plus
- Food, wine & bar knowledge.
- Proficient in spoken & written English.
- Ability to speak and write in a 2nd language is an advantage.
- Ability to create tasteful food and wine pairings
- Availability to work during opening hours, including weekends and holidays
