The Bar Manager at Conrad Orchard Singapore plays a pivotal role in overseeing the efficient and professional service of food and beverages, ensuring guests receive optimal service in accordance with the standards, policies, and procedures of the Conrad hotel and Hilton Group. This individual will bring a wealth of experience from a successful bar, ideally one recognized among the World's Top 50 Best Bars.


What will I be doing?

As the Bar Manager, you will be responsible for performing the following tasks to the highest standards:

  • To recruit, train, mentor and lead a highly motivated team of professionals
  • To develop and manage a rigorous training program to ensure world-standard staff knowledge of spirits and cocktails, bar service, and hospitality
  • To communicate with other departments to ensure a supporting team of professionals.
  • The ability to communicate with the Chef and Directors to discuss menus, marketing strategies and guest comments and concerns.
  • To deliver world-class service by actively leading the team delivering the guest experience, including bartending regularly and always being onsite during the peak periods.
  • To actively engage with the local and global cocktail communities to raise the local and international profile of the Manhattan Bar
  • To plan and organize resources needed for operation, and assist in the operations, to ensure that guest satisfaction is monitored and where appropriate, rectified throughout their meal experience
  • To complete and conduct performance evaluations for all bar employees.
  • To ensure guest needs and guest expectations are met by providing an efficient and professional service
  • To attend and participate in all required meetings
  • To run a meticulously executed bar program that is capable of securing nominations for local and international awards (I-S Magazine’s annual Reader’s Choice Awards, Drink International, World’s 50 Best Bars and the Spirited Awards at Tales of the Cocktail).
  • To deliver world-class beverages by taking responsibility for beverage menu development, including the main beverage menu, rotating specials, and the cocktail trolley service
  • To effectively manage the Manhattan Bar’s in-house barreling and house-made ingredients, ensuring a top-quality product and effective management of program inventory
  • To actively manage the bartender team and liaise with the kitchen to ensure a consistently exceptional standard of drink and food quality, efficient profitability and creative presentation
  • To actively manage bar service to ensure quick ticket times, seamless guest experience
  • To actively study to stay on top of world cocktail trends and best practices in order to ensure the Manhattan Bar is respected as a world-class program
  • Responsible for developing and managing exciting 12-month program of educational and other guest events
  • To actively manage beverage inventory levels, procurement, and par stocks to conserve the hotel’s capital and to deliver an uninterrupted guest experience
  • To work closely with, and follow the direction of, the hotel public relations team to develop the Conrad Bar’s local and international profile in traditional and social media
  • To liaise with suppliers and vendors to get the best products at the best possible rate


What are we looking for?

A Bar Manager serving Hilton Brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

  • Motivated and committed, approaching all tasks with enthusiasm and seize opportunities to learn new skills or knowledge in order to improve personal performance.
  • Flexible and responds quickly and positively to changing requirements including the performance of any tasks requested of you.
  • Maintain high team focus by showing cooperation and support to colleagues in the pursuit of team goals.
  • Minimum of 3 years’ experience in similar position, preferably in a successful cocktail bar with strong beverage program focusing on cocktails
  • Good English skills, both written and verbal to meet business needs.
  • Strong leadership and training skills.
  • Outgoing personality and willing to work for long hours.
  • Thorough knowledge of beverages, bar trends, service, cost control in F&B, labour controls, menu writing, maintenance, merchandising and accounting.
