Job Description:
- Responsible for the production of all products within the company.
- Oversee the whole production team's daily operations activities.
- Expected to uphold high standards of hygiene and food safety at all times
- Cleaning and maintaining tools and equipment and ensuring displays and signage are accurate and attractive.
- Collaboration with QC & Purchasing team to monitor inventory to ensure it is accurately maintained and reported
- Ensure proper handling, cleanliness, and maintenance of the butchery, cold rooms, materials, and equipment.
- Ensure that all associates adhere to hygiene policy and standards the relevant regulatory authorities set and HACCP guidelines.
- Conducting checks to minimize wastage & spoilage.
- Review processes with the QC team and purchaser to ensure continuous improvement
- Quality assessment of in-process and finished products
- To portion and prepare meat in cooking form such as roasts, steaks, chops, stew cubes, and grinding meat.
Job Requirements:
- Candidate must possess a Certified Master Butcher
- Preferably a minimum of 10 years of working with Ham, sausages, and marinated products.
- Working experience and knowledge in the HACCP program
- Solid knowledge and skills in ham and sausage production processes and recipe
