SUSHISAMBA Singapore, a renowned fusion restaurant blending Japanese, Brazilian, and Peruvian flavors, is seeking an experienced and dynamic Head Sommelier to join our pre-opening team.
Job Purpose
The Head Sommelier oversees the outlet's wine operations. He supervises the performance and training of the subordinates in beverage operations. He consults customers on wine selection. He monitors customer satisfaction and organizes wine tasting. He monitors beverage costs and performs inventory control.
Principal Accountabilities
- Administer purchasing and receiving procedures.
- Analyze alcoholic beverage business.
- Analyze service quality and customer satisfaction.
- Conduct staff performance assessment process.
- Develop menu.
- Identify and establish internal and external stakeholder relationships.
- Implement loss/risk prevention.
- Implement project administration processes.
- Lead team to implement change.
- Manage and implement business continuity plans.
- Manage compliance with food and beverage hygiene policies and procedures.
- Manage cost and quality controls.
- Manage crisis situations.
- Manage customer service.
- Manage food and beverage operations.
- Manage site/outlet and equipment maintenance
- Manage training.
- Provide information for management decision making.

- Interacts with customers and shows willingness to serve them with a pleasant attitude
- Communicate professionally with the supervisor in charge
Knowledge, Skills, and Experience
- Minimum 2-3 years of experience in similar positions in a high-volume, high end restaurant with Nightlife experience
- Good in English
- Good communications and interpersonal skills
- Customer oriented with a positive attitude and smiling face
- Cooperative and self-giving team player
- Ability and willingness to perform under stress
- Positive and high energy level
Physical Requirements of the job
The job of the head sommelier may require:
- Physical handling of products such as glasses, decanter and wine bottles
- Covering different shifts and working during public holidays
- Stressful conditions
