· Operational positioning working in the outlet 55 hours a week after breaks. Working in tandem with Senior Management; for all Outlet operations and communications between FOH and BOH.
· Lead and implement all Panamericana ethos and work culture practices as per staff handbook.
· Be a Brand Ambassador for Panamericana and attend external trainings in other cocktail bars. Participate in cocktail competitions and represent our brand actively.
· Curate a healthy and active social media presence to increase awareness and drive sales to our business.
· Leading the Bar team with all administration, creative and operational requirements.
· Manage weekly training sessions focusing on our entire Beverage Menu; All trainings must including notes and supporting documentation uploaded to Training Calendar.
· Lead all Stocktake; this includes accurate counts of all alcohol, data entry into Lime Inventory, uploading of report by Monday to Managing Director with edits on errors made by 12pm Monday, final report emailed by 3pm Monday.
· Maintain a monthly stocktake variance of 1%.
· Be across all drink trends and identify new markets to target for continued business. Recommend two cocktails per month to highlight on Specials page and potential Signature Menu.
· Manage all Bar Staff to ensure consistency of product; correct recipes, glassware, method, garnishing on all drinks.
· Collate all customer feedback by touching at least 5 tables per week and achieve 5 x 5 star Google reviews, or Seven Rooms reviews per month personally.
· Assist in developing CRM and guest- personalised database with the Guest Relations Team.
· Assist in Bar Meetings and update WIP every week.
· Understand thoroughly all table numbers and sections; Asador, Bar, Golf/ Par, Verandah and Lawn area.
· Drive bar sales through a thorough understanding of Food and Drinks menu, making the bar approachable with a clean bar top, seating and menus available at all times.
· Understand and champion all SOS and SOPS for FOH.
· Assist in Recruitment; hiring of all frontline restaurant staff ie. Management Executives, Bartenders, F&B Supervisors and Trainees etc.
· Maintain an eye and attention to detail to all operational matters and highlight any issues instantly to Senior Management.
· Identify and highlight any repairs and maintenance that need to be scheduled to Outlet Manager. Wherever possible suggest any contractors or vendors that can assist.
· Possess a positive and can- do attitude initiating solutions to problems before they arise.
· Work in tandem with a dynamic, medium- sized team and be clear of responsibilities and duties.
· Understand all cashing up and Daily Nightly Report procedures, carry out whenever necessary.
· On-boarding; assist in the induction and development of all Bar Staff; orientation, on the job training, career mapping and defining team culture at Panamericana.
· Be across Glass Stocktakes and identify what glassware needs to be ordered in advance.
· Create and manage a cleaning roster for the entire bar including; Bar Opening and Closing procedures, BOH cleaning and storage, wastage recording, all bar SOPS and SOS.
· Assist in maintaining the following KPI’s- Beverage COGS; 25%, 1% Stocktake variance.
· Communicate with all managers on stock items that require ordering in advance, with the Bar Team to understand which beverages to push and which items are running low or 86.
· Partake in all training programs and initiatives developed by Senior Management team.
