A Sous Chef specializing in Indian-Western fusion cuisine holds a vital role in the kitchen, blending the rich, diverse flavors of Indian cuisine with Western culinary techniques and ingredients. Here’s an overview of the job scope and typical requirements for this position:
Job Scope
- Assisting the Head Chef: Collaborate with the head chef in planning and developing the menu, incorporating both Indian and Western elements.
Assist in designing fusion recipes and ensuring they are followed accurately.
- Supervising the Kitchen Staff: Oversee the kitchen team, ensuring tasks are completed efficiently and meet the restaurant’s standards.
Train, mentor, and develop kitchen staff, including line cooks and prep cooks, in both Indian and Western cooking techniques.
- Managing Operations: Ensure the kitchen operates smoothly and meets quality standards.
Monitor and control food costs and inventory, minimizing waste.
Manage kitchen equipment, ensuring it is maintained and functioning properly.
The Successful Applicant
- Minimum 3 years of relevant working experience with a valid basic food hygiene certificate or equivalent.
- A good command of spoken and written English.
- Experience in Indian cuisine/ fine dining cuisine will be a bonus.
- Passion for Culinary Arts: obsessed with flavours, techniques, and the art of plating
