Roles & Responsibilities

· To assist the Production Head Chef in all matters relating to the Central Kitchen operations, leading the Central Kitchen team to achieve production goals, producing safe and consistent quality products while ensuring optimum utilization of resources and controlling overall costs.

· To supervise and work with the kitchen team to produce high quality food according to menu specifications at all times, while adhering to specified time limits.

· To assist the Production Head Chef with ordering and menu planning.

· Responsible for the preparation of food to be produced, complying with all applicable sanitation, health and personal hygiene standards and following established food production and preparation procedures.

· Prepare food for production which is according to the established specification requirements and procedures, menu recipes and presentation instructions at all times.

· To be responsible for the daily paperwork with regards to ordering and to work with the Purchasing department to assess arrival of orders and future product needs so as to prevent missed orders and over ordering.

· To manage the raw material costing and purchasing so as to ensure cost is kept within the budget.

· To ensure that the temperature records and monitoring is properly done on a daily basis.

· To ensure that the entire Production area is clean and tidy at all times.

· To ensure that the kitchen stores and other potential area of loss are secured at all times.

· To undertake project work when assigned, so as to develop skills in food production and management.

· To report any workplace incidence or failure to meet performance standards by any of the kitchen staff to higher authority.

· To ensure proper handling of all kitchen equipment at all times

· To assist in ensuring a high level of health and safety, cleanliness and food hygiene and to ensure that safe working practices are followed. To report any problems to the Production Manager / Executive Chef.

· To comply with grooming and appearance standards at all times.

· To cover all duties normally assigned to the Production Head Chef in their absence.

· Any other appropriate duties and responsibilities as assigned.
