Senior Stewarding Manager
Summary of Responsibilities:
The main responsibilities and tasks of this position are as listed below, but not limited to these:
- Ensure that all standards are met and that all steward executives, senior supervisors (senior team leaders), supervisors (team leaders), utility and senior utility persons are doing their proper tasks/duties and are adhering to all stewarding and hotel standards (uniform, grooming, etc.). Report any staff members that are not doing their proper tasks/duties or adhering to proper standards.
- Work closely with steward executives, senior supervisors (senior team leaders) and supervisors (team leaders) to ensure that all standards are met in the Stewarding Department.
- Ensure that hotel and department policies are enforced and take proper disciplinary action when required.
- Conduct training sessions for steward executives, senior supervisors (senior team leaders), supervisors (team leaders), utility and senior utility persons to ensure that all standards are met.
- Ensure that all necessary supplies are available for the culinary department and various F & B outlets. Inform chefs if supplies are not available.
- Ensure that all kitchen equipment, serving dishes, cutleries, and kitchen areas are properly cleaned and sanitized.
- Ensure that all setup and breakdown for functions are properly done. Ensure that staff helps during dish out in functions.
- Ensure that all fire and safety hazards are properly controlled.
- Comply with all fire, hygiene, sanitation, health, and safety regulations in the hotel and stewarding department. Always wear proper protective equipment.
- Inspect all back of the house food service areas for cleanliness and report any equipment irregularities / failures.
- Appraise staff’s performance for the purpose of delegating work assignment, recommendations on promotions, or making other changes in their works.
- Consult with the Executive Steward and Administrative Assistant for pertinent information regarding daily business and special functions.
- Maintain minimal yet sufficient chemical inventory in all ware-washing areas. Ensure that all chemicals are kept in the proper chemical cabinet at all times.
- Plan and prepare Outside Catering equipment and labor requirement.
- Submit paperwork on time, as requested by the Executive Steward or others.
- Complete assignments given by the Executive Steward. Assist the Executive Steward to support overall food and beverage operations.
Qualifications:
- GCE O level
- Certificate in Hotel Management is an advantage
- Experience in running huge operations, specially banquet functions of 1000 and above as well as outside catering of similar size.
- Experience in managing huge store as well as operation inventory of HEOs efficiently and effectively.
- Ability to motivate, lead and guide workforce of more than 100, including full time as well as casual labours.
- Fluent spoken and written English
- Computer-Literate
