Primary responsibilities
- To be accountable for the overall long term success of Smoke and Mirrors. His/Her key principle results shall be measured through success levels in his/her management of the profit and loss, concept and branding, sales and marketing, people, customer satisfaction and cost; as well as building in repute as a top brand and Trip Advisor rating.
- To ensure compliance to safety and hygiene standards, lease, legal, licensing as well as contracting obligations.
- To be responsible for the management of the Bar’s business activities including sales, customer services, promotions etc ensuring that revenue targets and customer satisfaction are met through high quality and consistent food and beverage standards and services.
- To manage a portfolio of patrons/clients; develop and implement a strategic business plan to capitalize on all revenue generating opportunities, with a key objective to achieve and exceed established revenue targets.
Job Function
- To prepare and manage the Bar’s annual Business Plan and Budget including manpower requirement, capital, operating expenses, etc.
- To develop a range of creative and premium Beverage products and services that promotes the Bar’s strengths and appeals with their clientele.
- To stay updated and abreast with beverage trends, competitive products/services and pricing for the purpose of using such market information to better sell and grow the Bar’s business.
- To closely monitor the financial and service performance, strategize and implement appropriate actions to bring the outlet’s results to the budgeted numbers.
- To manage cost and all expenditures of the outlet.
- To direct all the daily F&B activities of the Bar focusing on manpower issues (such as recruitment, selection and retention of service staff, performance reviews, etc), service quality and food & beverage standards.
- To ensure that the Bar is efficiently manned with staff rostered in accordance with the anticipated business volume and fluctuations.
- To review the operational procedures of outlet activities with the intent of cost reduction accruing from manpower, food/beverage wastages, utilities, etc.
- To ensure all operational and safety aspects of the outlet are managed at all times. Be responsible for optimal stock level, efficient operation of all equipment/appliances, licenses updates, and compliance to all statutory and fire and life safety requirements.
- To be responsible for overall people management of the outlet, including the conduct of performance review of staff members, staff recruitment, development and retention and taking appropriate measures in furtherance of staff stability.
- To ensure that all staff members are properly trained for the tasks they are performing, in particular the outlet’s operational procedures and minimum quality service standards.
- To maintain consistent and the highest food and service standards which meet the patrons/diners’ expectations thereby promoting good patronage and repeat business.
