Responsibilities:
- Ensure precise portioning and trimming of meats according to restaurant standards to maintain quality and consistency
- Assist in presenting an appealing display of fresh meats
- Inspect all meat products for quality and freshness
- Work closely with the chefs and kitchen staff to ensure timely preparation and delivery of meats, adjusting cuts as needed to meet specific dish requirements
- Adhere to food safety protocols and maintain strict hygiene and sanitation standards, such as proper meat handling, labelling, storing, and preparing in a clean environment
- Monitor inventory levels of meats, report shortages, and assist with meat ordering
- Ensure all butchering tools and equipment are properly maintained, sanitized, and stored correctly
- Interact with customers to provide recommendations on meat selections, cooking methods, and answer any enquiries related to the meat being served
Requirements:
- 3 – 5 years of butchering/meat-cutting experience, preferably in a Korean/Asian restaurant
- Comprehensive knowledge of meat cuts and knife skills
- Strong understanding of food safety practices and regulations
