Overall Job Objectives:
As a Sous Chef, you are required to prepare the highest quality of Japanese food items in accordance with the company’s food preparation and service guidelines. You are also responsible for managing team members from your department, and drive the business by monitoring and forecasting sales figures, and engage in cost control management. In addition, maintaining the cleanliness and sanitation of the equipment, food preparation area and cooking area according to government standards.
Job Responsibilities:
- Prepare, cook and present Japanese food items within your specialty
- Oversee the operational activities in the kitchen and check that food production adheres to the company’s specifications and served at the correct quality and portion size
- Deep product knowledge of Japanese food items and kitchen recipes
- Review and develop creative recipes in accordance with the company’s policies and procedures
- Adhere to all food and safety hygiene standards and requirements
- Monitor stock taking for ingredients, plan for orders and cost control management including food cost, spoilage and waste control
- Ensure cleanliness in kitchen, cooking areas, sushi counters, kitchen equipment and ensure food storage areas are clean, sanitized and organized
- Maintain a professional and friendly attitude towards all customers
- Manage customer complaints and feedback professionally
- Appraise candidates objectively and fairly during candidate skill test
- Directly supervise and review kitchen members to ensure they are in compliance with food hygiene standards and requirements, and follow health and safety regulations
- Oversee any disciplinary actions according to the company’s standards and guidelines
- Proactively supports any promotional activity within the store and contributes to an effective working environment
Job Specifications:
- Culinary certification and/or kitchen experience would be a bonus
- Possess excellent communication and interpersonal skills
- Possess strong organizational and leadership skills
- Passionate for Japanese culinary and detail oriented
- Able to cope in a fast-paced environment and remain calm during stressful situations
- Able to work effectively as a team
- Customer service oriented, and have a strong sense of customer service.
