Job Overview:

We are seeking a talented and creative Chinese Dessert Chef to join our team, specializing in the art of Chinese pastries, traditional sweets, and modern dessert innovations. As a Chinese Dessert Chef, you will bring a deep understanding of Chinese culinary heritage, combining both traditional methods and contemporary twists to create exceptional desserts that delight our customers.

You will be responsible for the preparation, presentation, and innovation of various desserts, ranging from classic mooncakes to trendy fusion creations. You will also ensure high standards of food quality, kitchen hygiene, and teamwork.

Responsibilities:

  • Prepare and Create Chinese Desserts:Make a variety of traditional Chinese desserts such as mooncakes, sesame balls, tangyuan (glutinous rice balls), Chinese custard buns, red bean cakes, etc.
    Experiment with fusion or modernized versions of traditional sweets, introducing innovative flavors while maintaining the essence of Chinese dessert culture.
  • Recipe Development:Develop and improve dessert recipes for the seasonal and permanent menu.
    Collaborate with the head chef on new dessert concepts and offerings that match the restaurant’s theme and customer preferences.
  • Quality Control:Ensure the highest standards of food quality, taste, and presentation.
    Maintain consistency in all desserts served, adhering to portion control and presentation guidelines.
  • Kitchen Management:Ensure a clean, organized, and safe kitchen environment, following all health and safety regulations.
    Manage dessert ingredients inventory, ensure proper storage, and coordinate with suppliers for specialty items.
    Oversee the proper handling and operation of kitchen equipment related to dessert preparation (e.g., steamers, molds, pastry tools).
  • Collaborate with the Team:Work closely with the kitchen staff and front-of-house team to ensure timely preparation and service of desserts.
    Train junior chefs or assistants in dessert preparation and techniques.
  • Customer Engagement:Engage with customers when necessary to explain the desserts and gather feedback for improving the dessert menu.

Qualifications:

  • Proven experience as a Chinese Dessert Chef or Pastry Chef specializing in Chinese sweets.
  • Extensive knowledge of traditional Chinese dessert recipes, ingredients, and techniques.
  • Strong understanding of pastry-making techniques, including steaming, baking, and frying methods.
  • Experience with modern dessert trends, particularly fusion of traditional and contemporary flavors.
  • Attention to detail, with a focus on presentation and consistency.
  • Ability to work efficiently in a fast-paced kitchen environment.
  • A passion for preserving Chinese culinary traditions while also embracing creativity and innovation.

Skills:

  • Mastery of classic Chinese desserts (e.g., mooncakes, tangyuan, sweet soups, red bean desserts).
  • Familiarity with modern and fusion dessert trends.
  • Knowledge of food safety regulations and kitchen sanitation.
