Job Description
We are looking for a talented Cold Dish Chef to join our kitchen team. If you're passionate about Japanese cuisine and love creating visually stunning and delicious cold dishes, this is the role for you. Roles & Responsibilities
- Dish Preparation: Prepare a variety of cold appetizers and side dishes, including salads, marinated vegetables, tofu dishes, and chilled seafood.
- Ingredient Quality: Ensure freshness by sourcing seasonal and premium ingredients.
- Plating: Plate cold dishes beautifully, adhering to the restaurant's aesthetic standards.
- Menu Development: Collaborate with the Head Chef to update the cold dish menu with new items and seasonal specials.
- Food Safety: Follow food safety protocols for handling, storing, and preparing raw or marinated dishes.
- Workspace Management: Maintain a clean, organized kitchen and ensure ingredients are properly stored and sanitized.
- Team Collaboration: Coordinate with kitchen and front-of-house staff to ensure timely and efficient service.
- Inventory Management: Monitor and manage stock for cold dish ingredients, minimizing waste and ensuring efficiency.
Requirements
- Experience: Previous experience in a Japanese kitchen, particularly with cold dishes, is highly preferred.
- Skills: Excellent knife skills and familiarity with handling fresh produce, fish, and tofu.
- Creativity: Ability to creatively plate and present dishes in an authentic Japanese style.
- Attention to Detail: A keen eye for freshness, presentation, and overall dish quality.
- Teamwork: Able to work effectively with kitchen staff and communicate with the front-of-house team.
- Endurance: Ability to stand for long periods and thrive in a fast-paced kitchen environment.
- Passion: A strong interest in Japanese cuisine and a desire to continue learning.

- Salary: Up to $3,500 basic + bonus
- Working Hours: 6-day work week, 4.30 pm to 2 am (including weekends)
