Roles & Responsibilities
- Slicing & Preparation: Slice and prepare fresh fish, seafood, and other ingredients for sashimi with precision.
- Quality Control: Inspect the quality of fish and seafood to ensure it meets our high freshness and quality standards.
- Presentation: Plate sashimi dishes beautifully, ensuring they meet our restaurant’s presentation standards.
- Menu Innovation: Work with the Head Chef to develop seasonal sashimi offerings and keep the menu fresh.
- Food Safety: Adhere to strict food safety guidelines when handling raw fish and seafood.
- Station Management: Keep the sashimi station clean, organized, and well-stocked with the necessary tools and ingredients.
- Team Collaboration: Work closely with kitchen staff to ensure smooth order flow and timely service during peak hours.
Requirements
- Experience: Prior experience as a sashimi or sushi chef, with strong knowledge of fish butchering and sashimi preparation techniques.
- Skills: Expertise in slicing fish and seafood with precision and creating uniform, thin slices.
- Knowledge: Familiarity with various fish, seafood, and garnishes used in sashimi preparation.
- Attention to Detail: Strong commitment to cleanliness and food safety standards.
- Passion: A deep interest in Japanese culinary traditions and working with premium ingredients.
- Endurance: Ability to stand for long periods and work in a high-paced kitchen environment.

- Salary: Up to $4,200 basic + bonus
- Working Hours: 6-day work week, 4:30 pm to 2 am (including weekends)
