Job Description

Chef de Partie:

• All preparation and cooking based on daily production schedule
• Bulk cooking in central kitchen environment
• To ensure all packing room activity are as planned and follow
• To ensure quality of preparations, cooking and packing meet the standard and maintain proper consistency in food quality set by management
• To ensure required workplace safety, food handling and hygiene standards are followed.
• To ensure all cook/operator in all production area work are efficiency and productivity
• Maintain a clean and organized production area
• Check that quantity and quality of finish goods are proper planned and done based on production schedule
• Check that quantity and quality of raw material ordered are received and stored in proper condition

Job Requirements

• Five years experience or more in western cooking and managing a culinary team in a catering operation
• Equipped with excellent sense of taste and creativity in food presentation.
• Ability to perform in a fast-paced environment
• Required to work on weekend and public holidays
• Required to start work early in the morning
• Staying East Preferred (Bedok)
• 6 days work week
• 7am to 5pm

Research & Development Sous Chef

Overview

As a R&D Sous Chef, you will work closely with the management and quality assurance department to develop new recipes and refine taste profiles through experimentation for B2B customer – Café, Education, Catering and Retail products. You will train kitchen team members, supervise and coordinate all culinary activities. You are also responsible for preparing consistent, high quality food products and improve efficiency to streamline kitchen operations.

Responsibilities include:

• Create new product recipes and ingredient selection while taking note of nutrition, shelf life and regulations
• Confirm product formulations and other information for constructing product specifications and documentation
• Make recommendations in the design of new manufacturing processes or to change current equipment or processes
• Plan, manage and run panel sessions and sensory tests on food products
• Review ingredients to meet customer needs and requirements
• Monitor and maintain product quality and food safety system
• Conduct food safety and shelf-life risk management during the product development stage
• Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
• Conduct studies to discover ways to improve the efficiency of production processes
• Ensure manufacturing and processing staff wear appropriate sanitary and protective gear to ensure health and safety
• Monitor every aspect of production to ensure compliance with established procedures and standards
• Oversee the maintenance, repair, and replacement of production equipment to ensure smooth work operations
• Set production objectives and implement action plans for achieving set targets
• Conduct forecast to identify potential risks and contingencies in a proposed project
• Prepare periodic reports to update upper management on food production activities
• Create workshifts to ensure round-the-clock food production operations
• Maintain accurate inventory of raw materials and processed food products
• Ensure products and raw materials are stored properly at optimum conditions
• Carry out surveys to identify customer requirements and adjust to meet such needs
• Follow all safety and sanitation policies when handling food and beverages

Minimum qualifications

• At least 8 years of relevant working experience in F&B
• Culinary-related certifications/Diploma preferred
• Fluency in English and Chinese

Responsibilities for Chinese Head Chef

• Management of staff including manning, training and development
• Monitors local competitors and compare their operation with his operation
• To maintain a high standard of all Chinese & Local food preparation, service and hygiene in his respective Kitchen, according to the standards required by the management
• To constantly be physically involve in all phases of the daily operation requirements
• Menu planning and theme events
• Supervises Chinese kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures
• Plans and manages food quantities and plating requirements
• Assists in developing daily and seasonal menu items
• Estimates daily Chinese food production needs

Qualifications for Chinese Head Chef

• Ability to lead in all areas of the galley including buffets and production
• Flexibility to work any shift in any area of responsibility without notice
• Strong knowledge of herbs, spices and flavorings
• Works with COO & Director in manpower planning and management needs
• Assist in the management of Kitchen Operations in a single food & beverage outlet or a shift, or section of food and beverage operations, including menu planning and costing, organizing special events, developing new dishes, maintaining food quality standards and comprehensive product knowledge
• Mandarin Chinese is essential for this job and Chinese experience is preferred

Job Description

Plan, improvise and develop menus to meet the changing needs of the clients or new business opportunities
Establish Nutritious and recipe costing
Plan and manage Labor Cost to achieve profitability / justification with productivity output
Maintaining the kitchen and surrounding areas in conditions that meet the company standards and health code regulations
Monitoring inventory and purchasing supplies and food from approved vendors
Audits on par stock on all areas to make sure that all required supplies are ordered and stocked in advance of need
Assisting and directing kitchen staff in meal preparation, creation, plating and delivery
Preparing meals and completing prep support as needed
Maintain a positive and professional approach with coworkers and customers
Plan and direct food preparation and culinary activities while ensuring food meets quality standards
Rectify arising problems or complaints
Drive and place safety and hygiene as key competency within the department
Establish and ensure full compliance to operating controls, SOP’s, policies, procedures and service standards.
Ensures the objectives and goals of the facility work together to achieve company positioning and success.
Respond to audits to ensure continual improvement is achieved.

Job Requirements

Formal qualifications as a western chef with minimum 5 years of relevant work experiences
Strong management skill and ability to manage a team towards the accomplishment of goals
Comfortable to provide coaching, advice and assistance when required
Strong time management skills and ability to manage multiple tasks at once
Comfortable to work rotating shifts and weekends/public holidays
Experience in working with a multicultural team
Knowledge of PC applications
