Position Overview:

We are seeking a hungry, driven and highly motivated Commis Chef to join our new pre-opening team. Under the guidance and warm leadership of our Executive Chef, you will have the unique opportunity to learn a fusion of French, Italian and Japanese wood-fired cuisine, where you will play an important role in ensuring the high quality and consistency of our dishes. Working alongside our select group of chefs, you will support our Executive Chef and the team in executing our menu with precision and creativity while maintaining impeccable standards of food presentation, taste, and hygiene.

Responsibilities:

• Learn to prepare and cook a variety of exquisite dishes according to menu specifications, incorporating elements of French, Italian, and Japanese cuisine.
• Help monitor and maintain inventory levels, ensuring optimum freshness of ingredients and minimizing waste.
• Adhere to all food safety and hygiene standards, following proper procedures for food handling, storage, and sanitation.
• Collaborate with the team to continuously improve kitchen operations, contributing ideas for menu development, cost control, and process optimization.

Requirements:

• Interested applicants with no prior experience but possess strong willingness to learn are welcome to apply.
• Basic culinary skills with a passion for experimenting with flavours and techniques will be advantageous.
• Knowledge or interest in French, Italian and/or Japanese culinary traditions and/or cuisine is good to have.
• Good time management and organizational abilities, with the ability to work efficiently in a fast-paced environment.
• A team-player with good communication skills and a positive attitude is important.
• Relevant culinary qualifications and certifications is preferred, but not mandatory.

JOB AND ROLES

1. To supervise and lead catering activities under the direction of the Head Chef/ Catering Operations Manager.

2. To ensure food service provision is carried out in accordance with all aspects of the Somerset Larder Food Safety & Quality Management System’s and any relevant legislation

3. To ensure all food is produced on time to the required quality standards.

4. To prepare and serve food at additional functions.

5. To assist the Head Chef/Unit Manager in planning menu’s and food provision in the most efficient manner, taking into account any equipment, cross contamination or allergen constraints, to meet customer orders.

6. To ensure catering service effectiveness, ensuring waste minimised, and write offs within agreed limits, in accordance of the cost plan.

7. To be involved in the development and implementation of new products, packaging, methods and equipment, within the ethos of minimising waste and sustainability.

8. To organise the ordering of all raw materials, packaging, consumables and cleaning chemicals as and when required.

9. To ensure all incoming raw materials and packaging when delivered is in accordance with specifications and is stored in the correct areas of the site.

10. To carry out specific food service tasks as required.

11. Willing to work shift work, weekend and public holiday.
