Requirements:

Responsibilities:

• Create and bake a wide range of pastries, such as cakes, tarts, pies, cookies, breads, croissants, éclairs, and more.
• Ensure that all pastry items meet the highest quality standards in taste and presentation.
• Work with the Head Chef to develop seasonal pastry menus.
• Create innovative new desserts or pastry items to add to the menu.
• Ensure that each pastry is prepared and finished to the required standard.
• Maintain high standards for consistency in texture, taste, and visual presentation.
• Regularly inspect pastries for proper appearance and taste.
• Keep track of the stock of ingredients and ensure timely ordering.
• Maintain a clean and organized work environment in the pastry section.
• Ensure pastries are prepared in time for service, especially for busy periods like breakfast, afternoon tea, or special events.
• Adhere to hygiene standards and food safety regulations, ensuring all equipment is maintained and cleaned regularly.

Requirements:

• Certificate from a recognized culinary institution.
• Minimum of 3 years of experience.
• Strong knowledge on pastry methods and skills, such as dough preparation, cake decorating, sugar work, and chocolate tempering.
• Precision is crucial in pastry making, whether in measurements, baking times, or decoration.
• Knowledge in Production flow and equipment usage.

Responsibilities:

• Reports to the Banquet Operations Manager on the day to day operation.
• To plan the duty roster, engage part-timers and ensure that they are deployed according to function needs.
• To ensure all employees (including part-time employees) are well groomed and trained according to established standards and to conduct on-the-job training for all new employees.
• To be responsible to lead the employees (including part-time employees) in providing excellent service to all guests during all banquet functions and outside catering according to SOP standards and club’s policies and procedures.
• To ensure that function rooms are fully set-up according to the event order.
• To provide Feedback / Recommendations / Suggestions on improvement of staff schedule, attendance, timeliness, complaints and innovations to Manager.
• To co-ordinate with Chef, Stewarding and AV Technician on menus, function set-up arrangement, service procedure and clearing of all equipment before and after functions.
• To work hand-in-hand with the Catering Team to achieve their monthly sales budget.
• To achieve a high level of service quality which meets the demands and expectations of all members
• Prepare Function Report every after event.
• In charge on the procedure, follow up and maintaining HACCP policies for Banquet.

Requirements:

• Minimum of 5 years with progressive supervisory positions in comparable operations.
• Certificate from a recognized Hotel Training School (or Culinary Institution) or an appropriate amount of progressive work experience to waive academic qualifications.
• Basic cocktails, wines, spirit and specialty coffee knowledge an advantage
• Experience operating Point of Sales System an advantage
• Keen to learn and grow in the Food & Beverage industry
• Able to work on rotating shifts, weekends and Public Holidays

Responsibilities:

· Reports to the Chef de Cuisine/ Sous Chef on a daily basis for communication of concerns and opportunities

· Assists in managing the activities of assigned outlet kitchen

· Assists in maintaining food quality and presentation

· Participates in outlet staff scheduling, evaluations, training, motivating, safety, and counseling where required

· Attends briefings as and when required, conducts daily line up’s and ensures appropriate information is channeled to subordinates in an effective manner

· Provides Food Requisitions and establishes close control for correct par levels, adjusting to member demands

· Works closely with the Chief Steward to maintain meticulous cleanliness and hygiene in all areas

· Performs all duties delegated to Management Staff and conducts himself in a “Role Model” manner, so as to encourage all employees to likewise

· Provides and conducts training for junior staff on Basics & food handling techniques

· Adheres to deadlines and objectives for the yearly business plan

· Able to take over the operation when Sous chef not on duty.

Requirements:

· Certificate from a recognized culinary institution or an appropriate amount of progressive work experience to waive academic qualifications

· Minimum of 8 years' experience with progressive positions from Chef de Partie in varying cuisine’s (with emphasis on American Style) in comparable operations

· Strong culinary knowledge on Western with emphasis on American and basic knowledge on Asian cuisine (Only apply for Asian cuisine position) and influences

· Knowledge of religious dietary requirements

· Fluent in English Language

· Understand production flow and knowledge in equipment usage

· Knowledge in basic computer skills
