• Responsible for the conceptualization, development, testing and scaling of new recipes for the kitchen production and new R&D products.
• To conduct continual testing, improvement and scaling of new and existing product item recipes.
• To conduct sensory evaluation and approval of new products / recipes. Ensure all product creation complies with customer, government and legal regulatory requirements within the country of use.
• To prepare product costings based on raw materials and manufacturing costs.
• Meticulously document and record all work within the company’s databases, including recipes, preparation lists and ordering databases.
• Collaborate with the Marketing department to understand the customers’ needs and requirements and to also assist in troubleshooting customers’ issues (when necessary).
• To develop innovative solutions to help grow and value-add to customers’ requirements, ensuring that any solutions provided are within the stipulated cost parameters and manufacturing capability.
• To facilitate the handover of new product(s) so as to ensure the smooth transition from R&D kitchen to Production.
• To assist the Production Head Chef in all R&D product development matters.
• Any other appropriate duties and responsibilities as assigned.

• Review and analyze all existing vendors, suppliers, pricing and costs, so as to ensure cost effectiveness.
• To continually source for new vendor/supplier options (e.g. raw materials, equipment, supplies, etc.), to review and determine product suitability and negotiate purchase price.
• To coordinate sample product demonstration, and facilitate approval process of new products.
• Manage purchase cycle and order quantities of all items, to ensure proper management and control of inventory.
• To monitor and provide action plans to reduce inventory of expiring or discontinued items.
• To work closely with internal stakeholders and vendors to determine the product requirements and specifications required.
• Develop and implement purchasing and contract management SOPs, and to ensure adherence to the SOP guidelines.
• To review current system and to implement automation of purchasing and ordering processes.
• Maintain and update vendors and contract database and to ensure proper documentation of all purchasing and procurement documents.
• Assist in ad-hoc projects as and when assigned.
• Any other duties and responsibilities as assigned.

• Report to QA Manager in food safety and workplace safety functions.
• Involve in incoming quality check, product sensory, on-line critical control points, food product testing & verification.
• Conduct regular food safety and workplace safety inspections/audits in Central Kitchen operations and outlets to comply with safety regulations.
• Maintain consistent documentation of FSMS, Halal & WSH records and audit reports.
• Support QA Manager in internal & external audits.
• Enforce good food safety and good workplaces practices for continuous improvement.
• Conduct joint food incident investigations to monitor rectification actions are adhered to.
• Support monthly pest control program with contractor.
• Perform aseptic microbiological samplings and testing for food products and hand swabs.
• Any other administrative or ad-hoc duties as assigned by Management.

Job Requirements

• Minimum diploma in Food Science or Food Technology field
• 2 to 3 years of working experience/QC in relevant industry
• Relevant QA/QC experience in handling ISO documentation and records
• Familiar with GMP, SFA, NIP, COA, Halal and microbial testing knowledge will be an advantage
• Team player with self-discipline, learning mindset and able to work independently
