Position Statement

The Director of Groups, Meetings & Events is responsible for ensuring coordination between the Catering Sales department and Front & Back of House departments. He/ she directs and drives all activities of the department, with specific responsibilities for ensuring high quality standards delivered by the team, as well as developing and implementing action plans set forth in the Marketing plan.

Position Statement

The Technician cooperates with his/ her superior to ensure the normal operation of hotel equipment. This role is responsible for the general work order maintenance work assigned by his / her superior or assisting the Engineering department’s maintenance team in completing other maintenance work.

Position Statement

The Director of Culinary will oversee and direct all aspects of the kitchen operation, providing functional assistance and direction to the kitchen operation as assigned. • Works with the Purchasing Manager in determining the minimum and maximum food par stocks. Ensure the completion of the market lists in accordance with Hilton quality and quantity standards. Inspect all perishable food items received for quantity.
• Keeps an up-to-date standard recipe file for all food items, to include: Sales history, Sales mix, Actual cost, Par stock, Production time.
• Work closely with Chief Steward to ensure all par level for chinaware, glassware and silverware are maintain.
• Work with Cost Controller to record an inventory document.
• To coordinate with Hotel Manager on sustainability project to ensure clear guideline are in place with other section head and ensuring data are record on LightStay.
• To keep close watch on daily food costs in each outlet and follow up on fluctuations, to co-ordinate with Food and Beverage Controller on costs and potential.
• To work closely with Hotel Manager and General Manager on project related to renovation, ordering and preparation for kitchen operation.

Position Statement

The Director of Sales develop sales strategies and ensure timely activation to support achievement of sales targets in managed segments of corporate and government accounts including groups to contribute to the overall commercial success of the hotel. You will support teamwork between Room Sales, Groups Meetings & Events, Reservations and Operations team to ensure alignment as one team to achieve overall business objectives.

What will I be doing?

As the Director of Sales, you will be responsible for performing the following tasks to the highest standards:

• Lead the Sales team in achievement of hotel's key performance indicators that include but not limited to hotel's revenue contribution, profitability, guest satisfaction, team members' satisfaction and loyalty contribution.
• Set individual sales targets for team and monitor for progress.
• Lead team towards achievement of business objectives.
• Organise familiarization trips, site inspections, hotel presentations and participate in tradeshows and showcases (local and overseas).
• Review and analyse business pace and market trends.
• Monthly production review and support appropriate sales activation plans.
• Monthly forecasting and results updates for commercial / business focused meetings.
• Lead and participate in sales and marketing activities including sales calls, sales trips, new accounts and groups business acquisitions and conversions.
• Support and participate in all client engagement plans.
• Review, recommend and implement local sales efforts to support business needs.
• Review and approve credit facility applications.
• Review accounts business production and implement appropriate plans to enhance share of wallet.
• Support Reservations and Groups Meetings & Events teams in achievement of overall commercial goals.
• Support in budget preparation and competition review.
• Manage stakeholder relationships including third party vendors in distribution, marketing and RFP resources.
• Be well connected with internal and external stakeholders including but not limited to owning company, Hilton corporate office, worldwide sales office, revenue management consolidated centre, conventions and visitors bureaus, airlines, trade partners, leisure travel wholesalers, online travel agencies and travel management companies to review and update market trends and explore new opportunities.

Position Statement

The Junior Sous Chef, Garde Manger will manage and lead the team in the absence of Chef de Cuisine/ Sous Chef to ensure smooth running culinary operation and maximize the level of standard in the hotel’s kitchen.

What will you be doing?

As the Junior Sous Chef, Garde Manger you will be responsible for performing the following tasks to the highest standards:

• Assist to plan, prepare and high quality food production and quality control for all cold products, and items prepared in the Cold Kitchen.
• Work seamlessly with recipes, standards and plating guides.
• Maintain all HACCP aspects within the hotel operation.
• Recommend improvement of training manuals and SOPs.
• Participate actively in quality initiatives such as daily Chef briefings and monthly team meetings in order to constantly improve the culinary operation, meet targets and keep communication flowing.
• Work on offsite events when requested and complete jobs as assigned outside of the kitchen area.
• Assist in inventory taking.
• Knowledgeable of hotel’s occupancy, events, forecasts and achievements.
• Work with Chef de Cuisine/ Sous Chef on proposing menus as requested, in a timely manner.
• Work closely with the Stewarding department to ensure high levels of cleanliness and low levels of lost and breakages.
• Effectively respond to guests’ requests and be receptive to constructive feedback.
• Maintain at all times a professional and positive attitude towards team members and supervisors.
• Coordinate, organize and participate in all production pertaining to the kitchen.
• Check and maintain the standards of dishes, portion control and costing at all times.
• Maintain good personal hygiene, clean uniforms, proper sanitation and cleanliness of the workstations and work tools.
• Be aware of the dangers of contaminated food and ensure ingredients in the refrigerators are checked and replaced appropriately.
• Follow-up on changes in new recipes or work methods pertaining to new menus, daily specials, and promotional activities as instructed by the Executive Sous Chef.
• Exercise maximum control on wastage to achieve optimum profitability.
• Check all equipment belonging to the department and make sure that all are in good working order, and if necessary, report faults or problems to the Chef de Cuisine/ Sous Chef.
• Ensure that recipes and costings are established and updated.
• Check that the quality of food prepared by team members meet the required standard and make necessary adjustments.
• To train and guide team members and ensure they are certified in their position before taking charge of an area of responsibility.
• Understand, practice and promote teamwork to achieve missions, goals, and overall departmental standards.

• A hands-on trainer who coaches and leads by example, motivates and impresses upon the team the right attitude and spirit of culinary excellence.
• Work well in stress situations, remain calm under pressure and able to solve problems.
• Knowledgeable in HACCP.

Responsibilities:

• Handle all leasing matters including but not limited to internal and external lease documents, renewals, lease transactions, URA quarterly tenant updates, conduct Customer due diligence
• Prepare meeting minutes, lease proposals, rent rolls and management reports
• Assist in preparing income / expenses, budgets and forecasts
• Maintain good relationships with internal stakeholders and tenants
• Work with Managing Agent, Finance Department, and/or internal and external lawyers on arrears management, property tax management
• Ensure all documents are timely and properly filed
• Conduct site inspections
• Any other duties as assigned

Requirements:

• Diploma in a related discipline
• Proficient in Microsoft Office especially Excel
• Must be detailed and good with numbers
• Able to multi-task
• CEA license holder is an advantage
• Knowledge in related software is an advantage
