SCOPE

Reporting to the General Manager, the Executive Chef will manage all kitchen operations including Stewarding operations with an emphasis on maintaining hygienic standards and practices, staff training, and overseeing the preparation and presentation of a consistent food product which meets customer’s expectations.

OVERALL OBJECTIVES

• Manage all functions of the Food Production and Stewarding operations to achieve the optimum departmental profit.
• Develop and maintain menus and recipes for each restaurant, while determining product prices, ensuring accurate costing of all dishes and maintaining good gross margins.
• Maintain comprehensive product knowledge in regards to ingredients, equipment, suppliers, markets and current trends and ensure that appropriate adjustments to kitchen operations are made accordingly.
• Ensure that all rules & regulations are strictly established and adhered within the hotel including the hotel’s policy on fire and safety as well as hygiene regulations including HACCP.
• Ensure that all costs are in line with sales without compromising quality, i.e. minimum 85% LQA score.
• Create a conducive environment and ensure that innovation and new ideas are fostered, implemented and shared with other hotels via corporate office.
• Support and implement Human Resources & Talent Development initiatives.
• Assist in preparing/consolidating the yearly budget for the department.
• Manage the consolidated inventory of Food & Beverage department’s OS&E together with the stewarding department.
• Review and update all departmental operations manuals annually.
• Assist in sourcing the best available products, constantly aim to improve quality, communicate about the products both internally and externally.
• Collaborate on the preparation of a yearly marketing plan for the appointed outlets in cooperation with the Sales & Marketing Department including a competitor analysis.
• Ensure that all managers plan and implement effective training programmes in the appointed outlets.

QUALIFICATION

• Minimum 10 years culinary experience, with 5 years in a kitchen management role, preferably with an international 5-star hotel chain.
• Experienced in various dining concepts in luxury hotels including all day dining, signature restaurants and celebrity chef restaurants.
• Experience in Banquet (preferred)
• Fluent in spoken and written English
• Possesses great leadership and motivational skills

Key Responsibilities:

Brand Management:

• Support the development and implementation of brand strategies to enhance brand equity and positioning across all sales channels.
• Ensure brand consistency and alignment with the company’s mission and values across retail, e-commerce, and other distribution platforms.
• Collaborate with cross-functional teams (product development, sales, and customer service) to ensure cohesive and compelling brand experiences.

• Monitor and analyse the effectiveness of marketing campaigns, generating insights for continuous improvement in each sales channel.
• Coordinate with external agencies, media, and influencers to plan and execute marketing initiatives that drive sales in all distribution channels.
• Develop compelling marketing materials, including brochures, digital assets, product packaging, and point-of-sale (POS) materials tailored to each platform.
• Manage partnerships and collaborations with key influencers, thought leaders, and brand ambassadors to expand reach across e-commerce, retail, and other channels.

Sales Channel Support and Optimization:

• Collaborate with the sales team to ensure effective marketing support across all sales channels, including retail and e-commerce platforms.
• Work closely with retail partners to design and execute in-store promotions and marketing initiatives that drive foot traffic and sales.
• Ensure that e-commerce platforms are optimized for conversion, working with web development teams to enhance the customer journey and user experience.
• Analyze sales data from different channels to assess the success of marketing efforts and provide recommendations for improvement.

Content Creation and Management:

• Implement SEO and SEM strategies to improve traffic and visibility across online sales channels.
• Oversee the management of the company's online store, optimizing product pages, and improving conversion rates.
• Track and report on key performance indicators (KPIs) for digital marketing efforts, including sales and conversion metrics for online platforms.

Market Research and Consumer Insights:

• Conduct market research to gather insights into consumer behavior, product preferences, and trends across retail, e-commerce, and direct-to-consumer channels.
• Use insights to inform product development and optimize marketing strategies for each sales channel.
• Work closely with the sales team to understand customer needs and preferences, ensuring that marketing initiatives are customer-centric and channel-specific.

Budget and Resource Management:

• Assist in managing the marketing budget, ensuring all campaigns and initiatives are cost-effective and generate a positive return on investment across different channels.
• Track expenditures and provide regular reports on budget utilization, sales performance, and campaign ROI.

Requirements:

• Bachelor’s degree in Marketing, Communications, Business, or have experience in related field.
• Experience in brand management, digital marketing, or a related role, preferably in the health and wellness or FMCG (Fast-Moving Consumer Goods) industry.
• Experience managing marketing strategies for retail and e-commerce platforms is a must.
• Strong understanding of digital marketing tools and platforms, including Google Analytics, social media management tools, and email marketing software.
• Experience with e-commerce platforms and online retail marketing is highly desirable.
• Excellent written and verbal communication skills, with the ability to craft compelling stories for different audiences and sales platforms.
