As part of Raffles Hotel Singapore’s Leadership Development Programme, the Food and Beverage Management Trainee will gain practical experience and knowledge through a structured 18-months programme. The programme will involve a rotation across various restaurant concepts and supporting departments, which will be customised based on operations’ and trainee’s expectations and requirements. To complement their learning and assimilation into a leadership role, the management trainee may be involved in special projects as assigned by F&B leaders, and mentored by a senior leader of the hotel.

Primary Responsibilities

Food and Beverage Service

• Provides excellent service at all times to all of our guests based on established hotel standard operating procedures.
• Is always well presented and adheres to hotel’s grooming standard.
• Greets and farewells guests and colleagues in a friendly and courteous manner.
• Assists colleagues and guests efficiently and in a professional manner.
• Takes responsibility for residents’ and guest belongings in the restaurant or bars.
• Has extensive knowledge of our food & beverage menus in order to service our product, including liquors and cocktails.
• Undertakes F&B special projects as directed by F&B leaders and/or mentor.  

Provide a leading and consistent guest experience

• Promotes sales through direct guests’ contact.
• Constantly obtains guest feedback during operation ensuring guest satisfaction.
• Handles minor complaints and reports to the managers for proper follow up.
• Builds strong relationships with local guests and builds loyal following as foundation for a successful operation.
• Maintains levels of confidentiality and discretion of the guest, colleagues, operator at all times.

Management and Leadership

• Is a role model for the Food & Beverage Associates.

Training, learning and development of the team

• Completes all components of the Raffles Leadership Development programme.
• Conducts regular on the job trainings for colleagues to develop their skills and knowledge.
• Assists in recording and submitting monthly On-the-Job Training hours to Food & Beverage Office before the 15th of each month.
• Guides the departmental orientation for new hires.
• Ensures that colleagues are aware of hotel rules and regulations.
• Ensures that colleagues are trained on fire and safety, emergency procedures and hygiene.

Opportunities & Exposure

1. Ecommerce Merchandising Management - Manages and executes brand site and e-tailers merchandising
2. Supports all day-to-day Ecommerce matters including operations, animation and campaign preparation

OPENINGS

• Assists the Senior VM Manager in completing the visual merchandising aspects of a new store by preparing the planogram, category organization and visual elements of the store.
• Assist the markets in sourcing and ordering of merchandising elements, manage the production processes, timeline and quality.
• Align market’s needs with regional direction in the presentation of products and visuals.
• Preparation of comprehensive and clear store opening fitting guide for markets to follow.

ANIMATION & PRODUCT LAUNCHES

• To consolidate and submit forecasting of launch POSM on behalf of markets based on regional marketing priorities and budget.
• Design and create visual merchandising displays that are relevant to the region’s assortment and marketing needs and manage the production and delivery to markets.
• Manage and plan the visual merchandising execution based on the diverse retail channels needs and limitations.
• Update planogram for all channels and formats by working with sales team on the long-term assortment plans.
• Preparation of visuals for various formats utilizing brand guidelines and manage vendors in the process.
• Preparation of comprehensive and clear launch fitting guide relevant for all markets to follow.
• To support the Senior VM Manager to provide asset creation and graphic layout for all launches and related market event setup.
• Consolidate launch reports from markets for submission to brand HQ.
• To submit assortment and planograms to Sephora for every launch changeover.

FORECASTING, INVENTORY MANAGEMENT & BUDGET

• To manage long-term planning for planograms based on the product assortment plan to identify POSM needs and allocation between all markets in the region.
• To consolidate and submit forecasting of generic and permanent POSM based on above, while validating warehouse stock levels to ensure accurate forecast.
• Track status of orders and ensure timely delivery of POSMs to each market.
• Work with logistics team to align allocation plans for markets and ensure healthy POSM stock levels.
• Manage local production to fulfill market needs where necessary.
• Manage SEAO VM budget.

MARKET SUPPORT

• Guide and support markets to ensure up-to-date and compliance of brand guidelines and visual merchandising strategy.
• Assist in solving of discrepancies and provide technical advice to maintenance needs and store upkeep.
