The Chef De Partie ensures smooth running services and a high standard of production by managing his/her section, works autonomously to produce dishes in compliance with cooking instructions. He/she supervises cooks and leading Cooks, ensuring all culinary standards as set by the hotel and regulated by local authorities are observed by the culinary team in their sections. He/she is responsible for the organization, coordination, and service for one area of the kitchen

Operations

• Produces and presents the dishes for the section in line with the cooking instructions and processes defined

by the hotel and brand

• Ensure personal cleanliness and proper deportment of all team members

• Ensures that dishes are well presented, of a high standard and at the right temperature

• Prepare and ensures availability of mis en place as required

• Organises his/her work and timing to suit fluctuations in guest numbers, special events and particular guests

• Ensure all equipment is maintained, serviced and cleaned. Report any problems to the Chef De Cuisine

Knowledge and Experience

• Minimum 2 years of relevant experience in a similar capacity

Operational Ownership

The working location is within walking distance from Bras Basah MRT station and City Hall MRT station.

Job Responsibilities:

• Assist with menu planning, inventory, supply management, and maintaining portion sizes
• Minimize waste and maximize thorough usage of food through proper and well-organized storage
• Maintain excellent standards of food quality and production, ensuring consistency in all dishes

Job Requirements:

• Preferable Degree or Skills Certificate in Culinary Arts/ Restaurant Management and Operations
• 5 to 7 years of relevant experience preferably in Modern Chinese cuisine
• Possess comprehensive knowledge of your specialty such as Wok, Steamer, Dim Sum, BBQ or Chopper and general culinary functions
• Prior experience working in a preopening team would be advantageous
• Work independently and good team player
• Possess good communication and interpersonal skills
• Possess a strong understanding and execution of Hazard Analysis Critical Control Points (HACCP)
• Comfortable with flexible work hours including shifts, split shifts, weekends, and public holidays

Senior Chef (Soth & North Indian Dishes) & Operations to organize the kitchen’s activities and controls.

You will be first in command in the facilities and will create, and inspect dishes before they arrive to the customers ensuring the quality

• Must know Natural ingredients, no GMO, no Ajinomoto, no Vegetable oils, no Dalda, etc
• Supervise and coordinate with chefs, food preparation methods & determine how to present the food to customers
• Plan menus and ensure uniform serving sizes with quality of meals
• Maintain and Check Vendor's quality & Inventory Management
• Able to understand the overall operational activities of the kitchen to have consistency
• Adhere to hygiene & sanitation as per the Singapore Food Agency
• Must possess skills for administrative handling of restaurant operations
• Manage and discuss with the Team - about complaints and improvements to be made as per customer requirements
• Manage personal cleanliness and kitchen premises

Requirements

• Proven 10 to 15 years of experience as a Chef in F&B Sector
• Exceptional proven ability in kitchen management, responsibilities, communication, leadership skills, and monitoring process
• Up-to-date with culinary trends and optimized kitchen works
• Must have experience in South & North Indian Veg & Non-Veg Dishes including Tandoori & Sweets recipes
• Having a certificate in Hospitality Management is an added advantage
• Knowing Systems, Online Portals, Promotions, and Digital Platforms is an added advantage
• Have to Work on Weekend and Public Holidays
• Able to speak in multiple languages is an advantage as the need to service and communicate with different nationality customers

Non Halal Kitchen Cafe.

- Must be able to handle pork and alcohol

-In Charge of all kitchen station and team, reports to the Sous Chef / Restaurant manager

- Provides training to the juniors once you are independant

Lead the team:

· Sets, maintains and constantly monitor service standards of the team

Food preparation:

· Plans monthly menu and work with Marketing on prints

· Cook dishes according to daily/ weekly/ monthly/ special festive menu

· Cook and guide kitchen team to cook according to correct number of portions for each meal period, without wastage

· Ensure freshness and quality of ingredients used and dishes served

· Ensure that the kitchen area is always kept clean and dry

Supplies/ Stocks control:

· Maintain supplies to ensure adequate but not over-order and no wastage

· Checking of goods receivable from suppliers

· Practice good food hygiene and safety standards

· Inspects and checks operating equipment to ensure good working conditions

Customer Service:

· Interact with clients and gather feedback

· Check clients’ satisfaction and provide immediate updates to Operations Manager and team

· Ensure team members provide good customer service during operations

Communication:

· Conduct briefing to update team members in absence of Unit Manager

· Effectively listen to team members and seek out concerns to address timely

· Inform Operations Manager or Head Office on operations or employees’ related issues

Administration:

· Prepare roster accordingly and schedules manpower

· Prepare attendance sheet, overtime process and team leaves application etc

· Ensure all colleagues’ time in and out are taken and accounted for.

· Ensure the team’s Public Holidays and Annual Leaves are planned, approved and cleared

· Record discipline matters after counselling employees

· Ensure team members’ documents eg forms are submitted to Head Office timely

· Ensure that resources, materials and ingredients are ordered accordingly with regards to wastage and delivery orders submitted timely

· Attend meetings when required

· Ad-hoc duties when required

Outlet Management:

· Co-creation of daily and festive menu

· Preparing food on a timely manner according to required menu

· Ensure quality and quantity of food served and appearance

· Ensure proper coordination of festive decoration with marketing and client

Hygiene and work safety:

· Practice good food hygiene and personal hygiene

· Take care to prevent any food contamination

· Reinforce all outlets follow strictly

· Observe safe work procedures when handling equipment

Grooming and personal hygiene:

· Ensure uniforms are properly laundered and are clean and neat

· Check that outlet colleagues follow grooming and look smart and presentable

· Covered shoes and socks must be worn

· Be sure to freshen up after smoking

· Excessive accessories and nail polishes are not allow

Duties & Responsibilities

• Provides guidance for all aspects of the kitchen’s day-to-day operations that precludes the management of food hygiene and safety, enforcing performance and quality standards, and monitoring to ensure attainment of these goals
• Controls and directs the food preparation process efficiently and professionally
• Creates meals using new or current culinary inventions or as the business prescribes
• Approves and polishes dishes before they are delivered and served to customers
• Produces quality menu that could change seasonally as the business requires
• Manage, train and educate kitchen workers to be par with the highest possible culinary standards
• Manages kitchen stocks and ensures minimal wastage
• Forecasts and assesses personnel requirements ensuring no shortage or excess of kitchen staff while keeping labor costs in control
• Procures, stores, and handles all food products and materials within the agreed-upon budget and maximizes gross profit to include the effective staff management and payroll expenses
• Ensures that base food preparations and mise en place are well organized for service, allowing smooth kitchen operations
• Maintains payroll, punctuality and attendance records
• Follows and strictly implements all food and sanitary rules as well as safety guidelines
• Keeps updated in the latest trends in culinary trends and kitchen processes and technologies
• Ascertains that the personnel follow the regulations on hygiene, stock rotation, dates, storages, refrigerator temperature control, pest control, reporting of malfunctioning equipment, reporting of notifiable illnesses, and reporting of absenteeism, whether due to illness or otherwise
• If and when necessary, keeps recipe files in excellent condition and up-to-date

Qualifications & Requirements

• Associate or Bachelor’s Degree in Culinary Arts or Science, Business, or relevant fields
• At least 5 years of experience as a chef
• Completed the WSQ Basic Food Hygiene Course – Food Safety Course Levels 1 and 2
• Proven ability of kitchen management
• Strong interpersonal and leadership skills
• Tenacious in picking up concepts and possesses strong logical and analytical problem-solving skills
• Good understanding of computer software such as POS, restaurant management system, and Microsoft Office
