Requirements

• Minimum 10 years’ experience of working experience of at least Head Chef (Catering Industry or Banqueting min >3,000 meals).
• Experience with Cook & Chill Cooking Methods and/or R&D experience would be an advantage.

Position Overview
The Junior Sous Chef directs all sections of the kitchen's operations to guide preparation of food across all workstations. The individual guides all sections of the kitchen's operations and implements continuous improvement across all workstations. The individual performs audits on adherence of customer service standards and leads the compliance of service, food hygiene, health, and safety standards.

The Role

A. Guide Food Preparation

1. Guide the preparation of food across workstations based on speed and rhythm of service
2. Guide the plating of food items across the workstations
3. Guide the preparation of workstations before the start of each service

B. Execute Food and Beverage Operations

1. Prepare roster based on operational needs
2. Monitor inventory level to ensure sufficient inventory for kitchen operations
3. Provide on-the-job training and performance evaluation to subordinates
4. Verify cost analysis of new dishes

C. Maintain Hygiene, Safety and Standards

1. Perform audits on staff's adherence to the organisation's personal, food and beverage hygiene standards

D. Contribute to Continuous Improvement

1. Provide recommendations for the development of new recipes to renew menus based on sales and suggestions
2. Suggest areas for continuous improvement across workstations

E. Maintain Customer Experience

1. Perform audits on the adherence of customer service standards
2. Analyse service challenges to ascertain customer service delivery gaps

Talent Profile

1. At least 5 years of experience in a luxury hotel or upscale restaurant
2. In-depth knowledge of food and kitchen equipment
3. Experienced in recipe formulation

What You’ll Do:

• Maintain cleanliness and hygiene of your work stations
• Ensure proper usage and maintenance of equipment.
• Ensure consistency in the preparation of all food items according to restaurant recipes and standards.
• Establish and maintain effective working relationships.
• Attend and participate in all kitchen briefings and meetings.
• Assist in all kitchen activities as instructed to ensure guests receive high quality food in a timely manner.
• Attend and participate in all training sessions as scheduled.

• Assist in the creation and preparation of Western/ Chinese/ Thai/ Indian cuisine.
• Assist in the smooth-running operations of a catering kitchen.
• Assist in the planning and execution of new menu, including research & development, costing, photo-shooting, etc.

Requirements

• GCE ‘O’ Level / Diploma in Culinary Art.
• Minimum 3 years of related experience.

• Creative and experimental in cooking.

Responsibilities:

* Responsible for food preparation and cooking to standard operating procedures;

*Ensure smooth operations and allocation of duties within the kitchen;

* Ensure that all orders are fulfilled in a timely manner and to expected standards;

* Attend to kitchen-related duties stock- checking and inventory and ordering;

* Practice and ensure good hygiene and housekeeping standards within the kitchen;

* Ensure food is stored, prepare and presented in a safe and hygiene manner;

* Uphold high standards of food quality to ensure customer satisfaction.

Requirements：

* Strong experience in Chinese cuisine including all varieties of noodles and rice

* Profound knowledge of different kinds of beverages

* Deep knowledge of every aspect of Chinese dishes

* Proficient with BBQ and Chinese specialty equipment

* Ability to manage numerous tasks, assign responsibilities and display high patience

Chefs work with other kitchen staff to ensure that your kitchen runs effectively, and they have to be experts at ensuring food quality and maintaining kitchen equipment. Other duties and responsibilities that every Chef has include:

• To cook varieties of North and South Indian traditional dishes.
• Able to follow company SOP.
• To keep up with cleanliness and hygenie measures. Ensure compliance to regulatory of food safety, quality, health and hygiene standards at all times.
• Basic knowledge of safety measures.
• Any other ad hoc duties specified by the Restaurant Manager or Supervisor
• Ensure great presentation by dressing dishes before they are served
• Keep a sanitized and orderly environment in the kitchen
• Ensure all food and other items are stored properly
• Check quality of ingredients
• Monitor stock and place orders when there are shortages, when needed.
• Actively participatein the kitchen training, including on the job training and support junior staffs and trainess in the development.
• Adhere company rules.
• Able to work well in a team, Team player.
• Preferably to have completed Food & Hygiene Course. (Keen applicants who has not attend the course will be sent for the Food & Hygiene)
