- To provide support for the Head Chef in managing inventory, ensuring kitchen meets food safety & cleanliness standard.
- Helping the team with food preparation & dish cleaning.
- In conjunction with the Head Chef, to ensure the consistent smooth operation of food preparation for the restaurant service ala carte, event & daily specials
- Deputies in the absence of the Head Chef and work as a team at all times
- Ensure all food are fresh all the time
- Update food costing, inventory list if any changes of raw food material
- Ensure each dish leaving the kitchen is checked for quality, quantity, presentation and correct temperature follow by SOP created by Head Chef
- Work very closely with the restaurant managers (planning & strategy)
- Able to schedule his staff according to business
- Always looking for improvements in all aspects of the operation
Job Requirements :
- Minimum 5 years of relevant experience in similar capacity in fine-dining Japanese restaurants
- Deep knowledge in and passionate about Japanese cuisine
- Creative in development of menu items and food presentation, in line with the Company's directives
- Solid hands-on cuisine preparation skills with sound knowledge of latest market trends
- Strong communication skills to manage, train and motivate team members
- Comfortable to work beyond normal business hours, whenever require
