Liberte HR are partnering with our client, Iki Concepts, to relaunch their cult favourite and bespoke cocktail bar, The Horse's Mouth. Originally based in Forum, the bar will be reopening in an exciting new location.
Job Summary
The Bar Manager keeps the bar running smoothly by handling day-to-day operations, managing resources, and employees, and creating a safe, fun environment for team members and patrons. He/she will promote and grow the business, hire and train team members, and ensure that patrons are receiving excellent drinks, food, and service.
Duties and Responsibilities
Operations
- You shall be responsible for inventory management of Wines through proper planning and utilization of available resources.
- Work with the Business Development Manager and OM to execute in-store marketing initiatives, promotions, and initiatives to increase the profile of THM.
- Work with the OM to improve restaurant standards and service benchmarks to increase revenue and reduce costs, which include food and beverage, manpower, supply, and utility costs.
- Jointly responsible for achieving sales targets, quality expectations, and service performance of KYTHM.
- Ensuring cash management protocols are adhered to at all times and balances are correct.
- Documentation of daily sales.
- Responsible for the costing and update of all costing sheets including but not limited to Wines, Cocktails, Spirits, and Non-Alcoholic beverages
- Work with OM on item sales and reports to properly gauge what items are sellable and what needs to be replaced
- Work with Business Development, OM, Kitchen, and team to plan and execute events and help to co-ordinate all items
- Work with the bar, kitchen and service team to ensure sound and timely procurement of supplies through the use of purchase order forms for dry goods, disposable items, wines, spirits, soft drinks etc.
- Attend daily role call prior to each service
- Attend bi-monthly food meeting
- Attend weekly operations meeting
- Helping other outlets who may be short-handed if and when their own operations allow
- Walk through work area including entrances and wash room before operation daily to ensure clean, neat, tidy and smell free environment
Service
- Supervise the team and ensure the execution of a high level of service and drink standards
- Participate in service to support the team.
- Ensure reservations are captured, recorded and honored
- Handling and resolving guests complaints
Human Resource
- Planning, coordination and supervision of staff to attain high standards of product knowledge and service.
- Working with OM to supervise, guide and develop of junior staff.
- Planning with OM and execution of training programs for bar and service
- Monitor performance of junior service staff and conduct periodical evaluations, coaching and counselling
- Highlight to and work with the OM to handle staff disciplinary issues and grievances
Health and Safety
- Ensure all equipment and spaces conform to sanitary regulations and high housekeeping standards
- Enforce food labelling
- Monitoring and ensure proper handling of equipment
Others
- Any other tasks as assigned to you by the OM.
