Corporate Chef - Research and Development

We are seeking an innovative and highly skilled Corporate Chef - Research and Development (R&D) with Michelin-starred experience and deep understanding of the Southeast Asian F&B market to join our culinary team. The Corporate Chef will be responsible for the conceptualization, development, and refinement of new menu items, recipes, and culinary techniques. This role demands creativity, a deep understanding of flavor profiles, and experience in food product development as we look at expanding into the SEA market.


Key Responsibilities:

  • Lead the creation and development of innovative dishes and menu concepts that align with the restaurant's vision and brand identity.
  • Utilize Michelin-starred experience to introduce cutting-edge culinary techniques and flavours.
  • Develop and refine recipes, ensuring consistency in taste, presentation, and quality across all outlets.
  • Conduct extensive research on regional food trends, consumer preferences, and competitive offerings in Southeast Asia.
  • Analyze and interpret market data to identify opportunities for new product development and menu innovations.
  • Collaborate with cross-functional teams, including HR, procurement, finance, culinary, marketing, and operations.
  • Implement and maintain high standards of food safety, hygiene, and quality control.
  • Participate in sensory panels and taste tests to ensure quality and consistency.
  • Train and mentor the culinary team on new techniques, recipes, and presentation styles.
  • To manage our local culinary team as well as future overseas culinary team and own the business P&L for food sales, food costs and culinary labor costs.
  • Review and partner with Food providers/Central kitchen in producing new menu and dishes

Requirements:

  • At least 10 years of experience in culinary management at a senior level as well as extensive experience in research and development.
  • Michelin-starred experience and understanding of the Southeast Asian market.
  • Ability to align culinary creativity with market trends and business goals.
  • Proven track record of successful menu item and product development.
  • Excellent cooking skills and knowledge of various cuisines and cooking techniques.
  • Strong creativity, innovation, and problem-solving skills
  • Effective communication and collaboration skills
