Job Description

• To be responsible for managing F&B operations at all outlets as well as banquet sales and delivering an excellent members and guests’ experience.
• Achieve budgeted revenues, monitor and control food, beverage and labor costs, and maximize profitability within all areas of the food and beverage department.
• Responsible for the development and implementation of F&B strategic plans and budgets.
• Guide monthly profit and loss (P&L) meetings to assess financial performance, identify gaps, assess competitor revenue and develop new strategies to increase revenue where opportunities exist.
• Responsible for the conceptual and operational design of outlets.
• Work closely with MARCOM for impactful promotions and marketing activities as to enhance outlets’ position and to increase their revenues
• Drive high levels of member’s satisfaction through visible leadership and hands on interaction with colleagues and members.
• Monitor weekly activities of F&B sales and ensure timely and accurate reporting of all financial information within the Club to assist in effectively achieving performance objectives.
• Set key performance targets for all F&B Outlet Managers to achieve and working with them to achieve the set targets
• Preserve excellent levels of internal and external customer service
• Review menus with Chef for latest trend and ensure quality food, purchase goods and continuously make necessary improvements
• Identify members’ needs and respond proactively to all of their concerns
• Provide appropriate service recovery to members' complaints. To follow up and to establish correct procedures to prevent future recurrence
• Lead F&B team by attracting, recruiting, training and appraising talented employees
• Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.
• Ensure colleagues are properly trained on quality and service standards and have the tools and equipment needed to effectively carry out their job functions.
• Recommend and initiate salary, disciplinary, or other staffing/human resources-related actions in accordance with company rules and policies.
• Recruit, evaluate, and select entertainment for food and beverage outlets and events.
• Establish and maintain relationships with vendors and suppliers relating to F&B operations.
• Work with the culinary and hygiene team to ensure levels of cleanliness and hygiene are in accordance with local laws and standards.

Job Requirements

• Degree or Diploma in Hospitality Management or equivalent
• At least 5 years' relevant experience in a similar capacity
• Food entrepreneurial mindset with strong decision-making skills.
• Strong business acumen and results-driven
• Strong analytical skills to understand and respond to key business performance indicators and competitive trends
• A good leader with excellent communication and presentation skills
• Ability to uphold good service standards at all times

Responsibilities

1. Responsible to analyse food safety and quality results and track performance against established goals and assist in periodic reporting of performance.
2. Serve as first point of contact for all customer quality inquiries, aiding in scheduling of audits, providing feedback to both simple and complicated inquiries.
3. Develop, update and implement current Food Safety Management System (BRC), HACCP and Halal Quality Management System (MUIS) in accordance to standards to ensure products produced meet relevant regulations and certification requirements.
4. Ensure production, warehouse and areas where activities affect food safety and quality comply with GMP.
5. Lead and conduct investigation of customer complaints, maintain investigation log and track investigation closure.
6. Issue CPAR to internal and suppliers for all non-conforming products including raw materials, work-in-progress and finished products.
7. Conduct annual mock recall, traceability and mass balance exercise.
8. Support and assist external audits and inspection including 3rd Party, Customer and Regulatory audits and inspections.
9. Develop and conduct appropriate training in all aspects of food quality and safety to ensure compliance to established systems.
10. Responsible for the application of Export Health Certificate and Phytosanitary Certificate.
11. Provide technical advice and support to sales, shipping, maintenance and production department.
12. Responsible to issue and complete customer inquiries, questionnaires, COA, product specifications and declarations.

Requirements

1. Minimum Diploma in Food Science or equivalent.

4. Able to handle English and Mandarin speaking staff and customers representatives.

8. Good understanding of Food Safety Management System.
