Job Summary:
The Sous Chef (Sushi) will assist the Head Chef in overseeing the sushi section of the restaurant, ensuring the highest quality of food preparation and presentation. The role involves supervising kitchen staff, managing inventory, and maintaining the standards of the restaurant. The Sous Chef (Sushi) is expected to deliver exceptional sushi dishes and contribute to the creation of a memorable dining experience for guests.
Key Responsibilities:
- Sushi Preparation: Prepare high-quality sushi dishes including nigiri, sashimi, maki, and other traditional and modern sushi items. Ensure all sushi is prepared according to the restaurant's standards and customer preferences.
- Kitchen Supervision: Assist the Head Chef in overseeing the daily operations of the sushi kitchen. Supervise and train junior kitchen staff, ensuring they follow proper techniques and safety standards.
- Quality Control: Monitor food quality and presentation to ensure consistency. Conduct regular taste tests and quality checks.
- Inventory Management: Manage inventory levels for sushi ingredients and kitchen supplies. Order and receive supplies, ensuring freshness and quality of ingredients.
- Hygiene and Safety: Ensure all kitchen staff adhere to health and safety regulations. Maintain cleanliness and organization of the sushi kitchen.
- Menu Development: Collaborate with the Head Chef to develop new sushi dishes and seasonal menus. Experiment with new techniques and ingredients to innovate and improve the sushi offerings.
- Customer Interaction: Occasionally interact with guests, explaining dishes and receiving feedback. Ensure customer satisfaction with the sushi experience.
- Administrative Duties: Assist in scheduling kitchen staff and managing shift changes. Maintain accurate records of food costs, wastage, and inventory.
Qualifications:
- Proven experience as a Sushi Chef, with at least 5-8 years in a fine dining environment.
- Extensive knowledge of traditional Japanese sushi techniques and modern trends.
- Strong leadership and supervisory skills.
- Excellent time management and organisational skills.
- Ability to work in a fast-paced environment while maintaining high standards.
- Ability to work for long hours, over weekends and Public Holidays.
- Certification in culinary arts or a related field is preferred.
- Certification in WSQ Food Hygiene and Safety Course.
- Good communication skills in English; knowledge of Japanese is a plus.
