JOB SUMMARY

Assist the Sous Chef in maintaining a smooth functioning Main Kitchen in conformance with corporate standard operation procedures. He must effectively control food cost, labour cost, other controllables, and maintenance and energy costs throughout the kitchen. The service of high quality food and achievement of budgeted or higher profits are a top priority, accident prevention and energy conservation are considered top priorities and cannot be over emphasised.

DUTIES AND RESPONSIBILITIES

1. Supervising all phases of food production. This includes banquet and cold prep in general, store room.
2. Maintain food quality and service in accordance with standardised company recipes and procedures throughout all food producing areas.
3. Check daily use records, production charts during peak and off peak period, adjusts estimating to the daily flow of business if necessary eliminating over production and waste.
4. Maintains and supervises good housekeeping, practices in all food producing areas, strictly enforcing “Clean As you Go” policy, also throughout all walk-in-fridges and reach-ins.
5. Check out all work station at beginning and end of the shift. Constantly spot checks food, to ensure foods meet our portion control and quality standards.
6. Assist to schedules and conducts regular monthly employee meeting with all Kitchen employees. Prior to this, will solicit area managers and lead hourly employees for topics to establish an agenda.
7. Actively seeks to develop a back-up person for his own position.

Primarily responsible for the preparation and production of dim sum, he or she can also be assigned to other tasks in the kitchen. Being a pastry and confectionery maker requires hard work and concentration, both mentally and physically. As such the candidate must possess a decent level of physical fitness and ability to pay close attention to details.

The pastry and confectionery maker answers to the head chef of dim sum. The candidate must have 3 years or more experience as a pastry maker. Possess good communication and organisational skills.

As a sushi chef in a Japanese restaurant, your responsibilities include handling a wide range of raw fish and other ingredients, managing food stock and working with an attention to detail to fulfil all orders within quality standards.

· Expertly cutting, slicing and filleting different types of fishes.

· Inspecting the quality of fruits, vegetables and fish used to prepare sushi dishes.

· Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation and food safety

· Maintaining a clean work environment in order to prevent food contamination.

· Regularly taking inventory of food supplies and other products

· Reporting any problems with kitchen equipment to the executive chef

· Sterilizing all utensils, instruments and equipment used in sushi preparation before every use.

· Communicating with wait staff to ensure that special requests and food allergy considerations are met.

· Good Communications with customers

· Creating new items with ingredients of the day

Requirements

· Excellent inter-personal skills, highly motivated individual;

· Excellent team player;

· Excellent bi-lingual communication skills, both written and spoken, English and Mandarin. Japanese is an advantage but not essential.

· At least 5 years of similar working experiences
