The candidate must possess a strong sense of ownership in his/her role and be able to multitask and perform in a fast-paced environment. As a Senior Kitchen Operation Executive, you will need to support chefs in ensuring smooth operations within the kitchens. This includes maintaining COGS through raw material movement, staff matters(rostering and manpower allocation), and day-to-day issues.
Key Responsibilities:
- Support Chefs in running the day-to-day operations smoothly
- Ensure food is cooked based on the indent provided by the operations team to minimize food wastage
- Maintain all documentation and reports required by the Food Safety and Environment Team (HSE)
- Handle pest control and hygiene issues including working with the Food Safety and Environment team(HSE) on audit results
- Generate menu specifications with photos before the start of the new menu
- Perform gatekeeper roles for SAP/System related matters( BOMS creation, upkeep live recipes)
- Track and report COGS
- Participate and assist in events catering
- Any other duties assigned by the superior
Core Competencies:
- Minimum 4-5 years experience in F&B central kitchen/production plant background
- Computer proficiency and with the SAP system would be advantageous
- Able to work independently with minimal supervision
- Highly organised, meticulous, and able to work under pressure
