Job Responsibilities
- Handle all aspects of yakitori preparation, including selecting, cutting, and skewering ingredients such as chicken, vegetables, and other meats.
- Expertly grill yakitori over traditional charcoal, ensuring each skewer is cooked to perfection with the right balance of flavor and texture.
- Monitor and control grill temperatures to achieve consistent results in line with the restaurant’s high standards.
- Maintain the cleanliness and organization of the grill and preparation areas, ensuring compliance with food safety and hygiene regulations.
- Work closely with the head chef and kitchen team to coordinate the timely and accurate preparation of orders.
- Prepare and mix marinades, sauces, and seasonings used in yakitori dishes, maintaining consistency in taste and presentation.
- Manage inventory of ingredients and supplies needed for yakitori preparation, including ordering and restocking as necessary.
- Innovate and develop new yakitori dishes or variations to enhance the menu and dining experience.
- Ensure proper storage and handling of all ingredients, maintaining freshness and quality.
- Uphold the restaurant’s commitment to delivering an authentic and high-end dining experience for guests.
Job Requirements
- Proven experience as a Yakitori Chef or similar role, preferably in a high-end Japanese restaurant.
- Deep understanding and expertise in traditional yakitori grilling techniques, including the use of binchotan charcoal.
- Strong knife skills and the ability to prepare ingredients with precision.
- Passion for Japanese cuisine, with a focus on authenticity and quality.
- Ability to work efficiently in a fast-paced, high-pressure environment while maintaining attention to detail.
- Excellent organizational and time management skills.
- Flexibility to work evenings, weekends, and public holidays as required.
- Basic knowledge of food safety and hygiene practices.
