Job Descriptions

The incumbent will be in charge of all kitchen related activities ranging from menu creation, plating design, kitchen staff management as well as inventory management. • Maintain high standard of hygiene, sanitation and cleanliness in all kitchen areas.
• Preparing the ingredients for senior chef.
• Measuring dish ingredients and portion sizes accurately.
• Responsible for making sure the food is prepared as per specifications received by senior chef.
• Dealing with deliveries and stock rotation.
• Minimise food wastage.
• To constantly upgrade culinary skills through training and/or self-study.
• Ad hoc duties as assigned by Superior.
• Comply at all times with the Staff Code of Conduct.

This position is for Chef De Partie cum Demi Chef for our restaurant Caviar.

Caviar is a fine-dining restaurant at Palais Renaissance on Orchard Road, serving modern-European cuisine. We have a small team giving their best everyday to make sure our guests have a great experience each time they dine at our restaurant.

Your general duties include but are not limited to:

• Perform daily kitchen duties instructed by Head Chef or Directors, including preparation work, cooking, cleaning, and any other duties as required in the kitchen.
• Assisting the Head Chef and Sous Chef in creating menu items, recipes and developing dishes
• Ensure Operations SOP are always followed, and security procedures are in place.
• Ensure consistency and high quality of restaurant food quality standards.
• Maintain and keep track of inventory and order supplies as needed.
• Comply to safe and hygienic food handling procedures.
• Ensure all fire safety and health regulations regarding food preparation and serving is adhered to on a constant basis.
• Perform any other ah-hoc duties as required/instructed by the Head Chef.

Requirement

• Minimum 3 years of experience in a similar role
• A high standard of personal hygiene
• Ability to multitask and work efficiently under pressure
• Able to commit to restaurant's peak period including weekends, eve of and public holidays
• Experience in Pastry would be highly advantageous

We are looking for the right candidate who prefer to work in a small team.

A Chef de Partie supervises kitchen operations and select, train, appraise, coordinate, discipline and coordinate kitchen team member in order to prepare, cook and present food according to hotel standard recipes.

· Works with locally available fresh products wherever possible

· Participates in planning utilization of food surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes and frequency of menu

· Supervises kitchen personnel and coordinates their assignments to ensure economical and timely food production

· Observes methods of food preparation and cooking, sizes of portions to ensure food is prepared in prescribed manner

· Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies

· Assists the Head Chef with the development and maintenance of policies & procedures, work processes and standards of performance within the Department.

· Directs subordinates to ensure productivity meets standards given in accordance with Hilton Brand Service Standards

· Ensure new technology & equipment are embraced, improving productivity whilst taking work out of the system

· Through hands on management, supervise closely all his team in the performance of their duties in accordance with policies & procedures and applicable laws

· Delegate appropriately, duties and responsibilities to equipped and resourced team members, nurturing and developing them whilst ensuring standards of operation and safety are maintained

· Develop and assist with training activities focused on improving skills and knowledge

· Monitor team member morale and provide mechanisms for performance feedback and development

· Handles guest and team members enquiries in a courteous and efficient manner, reporting complaints or problems if no immediate solution can be found, whilst feeding back a prompt follow up

· Is knowledgeable in statutory legislation in team members and industrial relations, understanding and strictly adhering to rules & regulations established in the Team member handbook and the hotels policies concerning fire, hygiene, health & safety

· Ensure high standards of peronal presentation & grooming

· Maintains positive guest and colleague interactions with good working relationships

· Exercise responsible management and behavior at all times and positively representing the hotel management team and Hilton

· Respond to requests to undertake any reasonable tasks and secondary duties and to changes as dictated by the hotel, industry and company

· Effectively communicate guiding principles and core values to all levels of team members

· Attends and contributes to all Meetings as required

· Ensure all team members provide a courteous and professional service at all times

· Assist in hotel operations when required

Working Days: 5 working days ( 1 weekday off, 1 weekend off )

Requirements

• Diploma or a bachelor’s degree in Culinary Arts
• At least 1 year of working experience in the related field is required
• Proven work experience as a Demi Chef, Chef (Pastry) or a similar role in the hospitality industry
• Experience in MICHELIN and / or fine dining restaurants are highly advantageous.
• Complete knowledge of the industry’s best practices, hygiene, and safety standards
• Familiarity with pastry preparation techniques and kitchen equipment
• Excellent hygiene standards
• Ability to work at flexible hours and on weekends

Job Description:

To be successful in this role you should be able to take care of daily food preparation and duties assigned by the superiors to meet the standard and the quality set by the Restaurant.

A) Follows the instructions and recommendations from the immediate superiors to complete the daily tasks.

• Ability to produce own work in accordance with a deadline and to assist and encourage others in achieving this aim.
• Checks periodically expiry dates and proper storage of food items in the section.
• Consults daily with Sous Chef and Head chef on the daily requirements, functions and also about any last-minute events.
• Guides and trains the subordinates daily to ensure high motivation and economical working environment.
• Assess quality control and adhere to restaurant service standards.
• Carry out any other duties as required by management.

Line cook duties will consist of assisting the executive and sous chef with their daily tasks.
